In most African countries, the staple food is a form of cooked maize (corn) meal. The maize is grinded into a form of flour and boiled with water for some time until the flour has turned into a round paste. This paste is not sticky and actually tastes a bit like bread. You can have this maize meal with anything from fish, to chicken to beef or veggies!

I live in South Africa. The staple food for most Africans is maize (mealie flour) we mix it with boiling water and salt and leave it to cook. We call it pap. It can be eaten with meat, sour milk and sugar or on it's own with just butter. Much like Polenta, only finer and white in colour.

Ground nuts or peanuts, egg-plant, various meats and of course rice are all ingredients found in A LOT of African dishes. Please google "African recipe's" you will see that I am correct. :) Stop listening to these other yonnies. Of course, yes, the corn mush is correct as well.
