FRIED CHEESE STICKS

1 block of any hard cheese
1/2 cup cornmeal
1/2 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon tabasco
1 medium egg
1/2 cup finely grated cheese
Buttermilk

Place cheese in freezer for one half hour. Remove cheese and cut into 1" thick strips just before cooking. Mix batter; add corn meal and flour, salt, tabasco, egg and add buttermilk until at a consistency slightly thinner than toothpaste.

Dip cheese sticks into batter (use toothpicks to handle them) carefully place in a pan of hot oil making sure that oil covers good, do not put in to many at once or they will stick together. When browned evenly remove and immediately roll in grated cheese.

CHEESE STICKS

1/2 lb. butter (2 sticks)
2 c. sifted flour
1 lb. grated sharp cheddar cheese
Tabasco sauce to taste
Worcestershire to taste

Cream butter until fluffy - add flour, shredded cheese and seasonings. Shape into small sticks or balls and press lightly with the tines of a fork. Bake on a greased pan at 350 degrees for 12-15 minutes.

These are so delicious!

MOZZARELLA OR JACK CHEESE STICKS

Cheese, cut into 3x1/2" sticks
Egg & milk mixture (like you would make for French toast)
Italian bread crumbs

Make egg and milk mixture "eggy". Dip cheese sticks into egg mixture, then in flour. Dip in egg mixture again. Now dip in Italian Bread Crumbs. Set cheese sticks on plate line with waxed paper. Put in freezer for at least 15 minutes. Deep fry in hot oil until breading is brown. Serve plain or with pizza sauce for dipping.

Make sure you put waxed paper between your layers of cheese sticks before putting in freezer.

CHEESE STICKS

Mozzarella cheese, sliced to the thickness you'd like, but not too thin or they will melt too fast!
Italian flavored bread crumbs
Frying pan with enough oil in it to cover the sticks
2-3 eggs
Little milk

Heat the oil until it "crackles" when you throw a dash of bread crumbs in.

In a bowl combine the 2 eggs and maybe a little less than 1/4 cup milk. Soak the cheese in the mixture. Roll the wet cheese in a bowl full of bread crumbs. You may have to use your hands and pack it on! It may help to put it BACK into the mixture then BACK into the crumbs because they usually don't stick! Cover as much as you can as thick as you can.

Place 2-3 sticks (breaded) in the oil and fry until they're golden brown all over. Move quickly (turning every 20-30 seconds) or they'll melt.

1 lb packaged mozzarella
2 eggs, beaten
1/2 cup flour
1 cup flavored bread crumbs
Vegetable oil for frying

Slice the mozzarella into flat wedges (it's easier to fry this way).
Set up 3 bowls, one with flour, one with egg, one with the bread crumbs.
Coat each piece of cheese first with flour, then egg, then bread
crumbs, then throw immediately into the hot oil to fry (the coating
doesn't turn out as well if you let it sit around inside its coating).
Fry for a minute or two on each side until coating is golden brown and the cheese is melted.Sprinkle with lemon juice and serve.
The difficult part of this is keeping the cheese from escaping the coating while it's frying. For best results, don't let the oil get too hot while frying, and try to keep the oil level at about 1/4 inch deep at all times during the process (i.e., do not deep fry).
