The person lost their composure. They fell apart or became upset or emotional. He totally came undone when I told him that our relationship was over.

If you are calm and reasonable you are "keeping it together."

Therefore, the opposite is to be unreasonable, frenzied, and mad, then you are considered to have "come undone."

"Undone" meaning without control of yourself.
