I still have my 67 conv mustang with a 302 4v. I worked at ford at the time. We had fifty 302's that were put in the 67 cars . During 68 we still had some 289's that were put in some of the 68 models. Ford did a lot of crazy stuff at the factory. We did put 427s in mustangs in 67 and 68, but it was not a standard option in any mustang . Ford was heavy in the racing program at the time and would special order any combo if you paid the price.

Ok I have a 1964 1/2 Mustang that has a 289. So my guess would be around 1965 or1966. Because the 289's replaced the 260's
V-8. Then the 302 basically replaced the 289 even though some of them were made in the same year. Before 1968, all engines used in cars bore the serial number on the top surface of the engine block at the front left side of the engine. This is how you can tell what engine you have. In 1965, Ford offered the 260, 289-2V then 289-4V. 289 high performance the 302-2V, the 302- 4V and the 302-4V Boss. Now this is just gal's guess.
