Yesterday I came down with a fever, headache and joint pain. The fever spiked at 102.5. In a few hours it was over. I am middle aged and reasonably healthy, with just the usual aches and pains due to my age.

Fever would indicate that your body is fighting some sort of infection. It does not sound serious, may be a 24 hour virus, very mild flu, could be a number of things. I would go to the doctor, get a urine culture. Possible that you have a bladder infection (even without symptoms). Unfortunately, if the fever and symptoms do not go away, it will take a doctor's visit to properly address the problem. I would not be overly concerned, but I would address the problem before it escalates into something more serious.

You said he took x-rays looking at the bones, but did he examine the muscles or the ligaments? My grandmother has a beagle who tore his CCL (Canine Cruciate Ligament, the doggy version an ACL in the knee) and limped around, couldn't hardly put weight on his leg, sounds a lot like your chow. Was this chow an active dog before this injury? Our beagle was, so active in fact that that's what caused it! Get a better vet, tell them you suspect he may have torn something. Though I'll warn you right now, the surgery required to fix a torn CCL, if that is what it is, is not cheap.

You might have been coming down with the flu and your immune system, was quick to fight it off.
