this is my favourite sweet potato pie recipe, my kids love it as well
and its so simple to make...enjoy, just mix all ingredients together and bake ..it takes 5 minutes to prepare
2 cups cooked mashed sweet potatoes
1 cup milk
2 eggs
1/2 cup sugar
1 tablespoon butter
1 teaspoon salt
1 teaspoon grated lemon or orange rind
1 unbaked 9-inch pie shell
Combine mashed sweet potatoes, milk, eggs, sugar, butter, salt, and the grated lemon or orange rind. Pour into the unbaked pie shell; bake at 425° for 15 minutes. Reduce heat to 350° and bake the sweet potato pie for about 35 minutes longer, until the pie is set. A knife inserted in center should come out clean.
EASY NO FAIL PIE CRUST
2 c. all purpose flour
1/2 tsp. salt
1/3 c. buttermilk
2/3 c. vegetable oil
Measure flour and salt. Add milk and oil. Stir only until dry ingredients are blended in. Divide dough in half. Roll each portion between 2 pieces of wax paper. Remove top layer of wax paper and transfer crust into pie plate with bottom wax paper still intact and on top. Remove wax paper from crust and shape edges as desired. Repeat with second portion of recipe. So easy and delicious.

Old Fashioned Sweet Potato Pie
2 cups peeled, cooked sweet potatoes
1 1/4 cups sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites
Preheat the oven to 350 degrees F.
For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.
For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

2 cups sweet potatoes, mashed, cooked
3/4 cup sugar
2 tablespoons molasses (optional)
2 eggs
1 1/2 teaspoons nutmeg
1 teaspoon powdered ginger
1/2 teaspoon cinnamon
1 tablespoon orange zest
2 tablespoons butter, melted
1 1/2 cups milk, cream or evaporated milk
Preheat oven to 450 degrees F.
Line a pie pan with rolled out dough, prick all over with fork, then press a piece of heavy-duty foil directly into the pie shell.
Bake for 6 minutes, remove foil and bake for 4 more minutes, until just beginning to brown.
Combine the sweet potatoes and sugar in a large bowl, then beat in molasses and eggs.
Add the spices and orange zest and stir well.
Stir in melted butter and milk.
Pour into pie shell.
Bake for 15 minutes, then reduce heat to 300 degrees F and continue baking for 30-40 minutes, or until filling is firm around edges but center remains slightly soft and quivers when you move the pie.

INGREDIENTS
1 1/2 cups crushed graham crackers
1/2 teaspoon ground cinnamon
2 tablespoons brown sugar
1/2 cup butter, melted
1 (8 ounce) package cream cheese, softened
1 (29 ounce) can sweet potatoes, drained and mashed
1/4 cup packed brown sugar
1/4 cup light cream
2 eggs, lightly beaten
2 tablespoons vanilla
1 (10.5 ounce) package miniature marshmallows
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch springform pan.
In a medium bowl, mix graham crackers, cinnamon, 2 tablespoons brown sugar, and butter. Press mixture into the prepared springform pan to form a crust. Bake 10 minutes in the preheated oven, until lightly browned.
In a large bowl, blend cream cheese, sweet potatoes, 1/4 cup brown sugar, light cream, eggs, and vanilla. Pour into the baked crust.
Bake pie 1 hour in the preheated oven, placing marshmallows on top to melt during the last 10 minutes.

Go to Food Network website. They have everything... I wouldnt trust this site, i mean people could be leaving out one ingrediant on accident. Just dont, that happened to me when I made someones pumkin pie recipe, i still dont know what i was missing. I am pretty sure i left out a cup of sugar cuz it said it called for 2, i think it must of been 3.
