From what I've seen (my dog once ate a whole bag of mini snickers bars) the most common side effects from dogs eating chocolate are: lethargic, having the runs, drinking excess water, sometimes vomiting and hyperactive (it can differ depending on the dog).
As for other foods, it all depends on the dog. I've come across dogs that could eat any and every type of people food without getting sick and other dogs that couldn't handle any type of people foods. The only food that my vet has ever cautioned about has been chocolate.

The theobromine(sp?) in chocolate acts like a super-dose of caffiene in dogs. The purer the chocolate, the worse the reaction in the dog. Bad to worse are: milk chocolate, semi-sweet, baker's chocolate. The smaller the dog, the smaller the amount of chocolate needed for a bad reaction.
As to the affects on behavior...if the amount is small and the chocolate ingested milk chocolate, there probably won't be a big reaction. But if the dog starts acting hyper OR lethargic, gets the runs, starts drinking large amounts of water, starts vomiting...it is imperative to get this dog to the vet to get help. The dog can literally die from what he ate. The sooner he gets medical treatment, the better chances of his survival.
If your dog ever gets into chocolate, the best thing to do is contact a veterinarian immediately and discuss the dog's size and the amount/quality of the chocolate. Better safe than sorry.
As to other foods...onions, grapes and raisins can all cause bad reactions in dogs.

Dark chocolate can kill your dog, it's best not to let it have ANY kind of chocolate just to be on the safe side.
Onions believe it or not can also make a dog sick, but most vegetables make good treats, ours like carrots!
if your dogs behavior changes after it ate chocolate, if it was sweetened milk chocolate, I imagine your dog was on a sugar rush.
Oh and ordinary houseplants should be kept where the dog can't get to them.

It can have various affects on a dogs behavior, sometimes very hyper, and then as the stomach ache sets in, lethargic. Any "people" food can make a dog sick because it is typically richer. Sugary foods, especially upset the stomach.
