Because when the earth was created, God made two of each kind and did not allow any reproduction with a different kind, because it would have been an abomination to do so, especially after Adam and Eve committed the first sin in the history of the Bible.
What God has created and has declared it so, it was considered law, and it was good.
The Bible not only explains these laws, it also explains science and how it is to be used.

Vastly different species cannot interbreed. This is a scientific fact and biologists know how and why this is so. It is not a miracle - it's true in the bible because it was an observation, but there is no proof that it was deliberately made this way by a sentient being.
Two creatures mating and producing a similar creature is logical and practical. Species evolve to fit their environment - if two fish brought forth a monkey, the monkey would be totally unable to survive in that habitat and would not survive to reproduce. Simple natural selection prevents such things from ever developing the possibility.
Please explain the liger, tigon, zorse, wolphin, zeedonk and cama.

Breeding different species of dogs, horses, plants, is NOT crossing between two kinds--part bird, part bull or part human, part turtle.
We have different species of humans also: Part black, part white, but they are still human. You can't cross a caucasion with a purebred horse.

Also tiglons ( one parent lion, the other a tiger)
Crops are hybridized all the time.
Ever eaten a kiwi? How about a pluot?
The bible is not very helpful when discussing science questions.
