cheese sauce is usually a white sauce with cheese added. So, take 3 tbsp of butter, melt and 3 tbsp of flour, stir that, add 1 cup of milk(lowfat if you need to). Add about1 cup of shredded cheddar cheese, stir, cooking, until right consistancy.

MILDRED'S EASY CHEAP CASSEROLE 1 (8 oz.) cheese whiz 1/2 c. milk 7 oz. spaghetti, break in thirds cook and drain 2 tbsp.butter 10 oz. cooked broccoli 1 c. chopped chicken or turkey 1 (4 oz.) can mushrooms, drained 2 tbsp. chopped pimento 1/4 tsp. salt 1/4 tsp. sage Combine cheese and milk mix. Toss spaghetti with butter. Combine all ingredients Mix well. Spoon into 2 quart casserole. Cover and bake at 350 degrees for 30 to 35 minutes. Stir well before serving. This is easy cheap and good. CHEAP CHILI 1 lb. extra lean chopped beef 1 can peeled tomatoes 1 can tomato sauce 1 lg. yellow onions, chopped 1/2 sm. green pepper, chopped 1 1/2 tbsp. chili powder 1 tsp. cumin Brown the beef and onions in a 12 inch skillet and drain before adding all other ingredients. Simmer for 1-2 hours. Serves 2 with healthy appetites! EASY & CHEAP MEATLOAF 1 can chicken or beef vegetable soup 3/4 lb. ground beef 1/2 c. oatmeal 1/2 c. milk 1 onion, chopped 1/2 tsp. salt Dash of pepper 1 egg, beaten Put soup in blender or mash fine. Combine all ingredients and put in baking pan or dish. Bake 1 hour at 350 degrees or until done. Will be soft but gets firmer as it cools. Great for sandwiches!

Here is a recipe that you might try:
Broccoli & Cheese Casserole
30 ounces pkg. frozen, chopped broccoli
1/2 cup fat-free egg substitute
1 - 10 1/2 oz can reduced fat cream-of-mushroom soup
1 cup fat-free mayonnaise
1/2 cup low-fat cheddar cheese, shredded
2 tablespoons onions, minced
Dash of black pepper
6 reduced fat Ritz crackers, crushed
1. Preheat oven to 350 degrees.
2. Spray a 2-quart casserole dish with nonstick spray. Set aside.
3. Cook broccoli according to package directions.
4. Combine broccoli, egg substitute, soup and mayonnaise in a large bowl. Stir.
5. Add cheese, onions and pepper to the broccoli mixture. Stir.
6. Pour the broccoli-cheese mixture into the prepared casserole dish.
7. Crush and sprinkle crackers over the top of mixture.
8. Bake at 350 degrees for about 30 minutes or until sauce is hot and bubbly.
Makes 6 servings: Calories 153, Fat 4g, Cholesterol 7mg

Super Healthy Cheesy Sauce
Ok, I know it sounds REALLY weird to put a can of beans in a cheese sauce, but it's really thick and creamy. Most other cheese sauces are just loaded with saturated fat, but this one is really high in protein, fiber, and low in fat! It is so much more filling than regular cheese sauce so you can use less. Give it a shot, it sounded really weird to me, but I liked it!
1 (16 ounce) can great northern beans, rinsed and drained (will yeild 10 oz. of beans)
1 cup low-fat cheddar cheese (or you could use regular fat cheese)
1 cup skim milk
1 tablespoon dried onion flakes
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1/4 teaspoon garlic powder
salt
Combine rinsed and drained beans with the cheese, skim milk, and all the spices except salt.
Put in a blender, and blend till completely smooth.
Heat over stove until cheese sauce bubbles or reaches desired consistency, stirring frequently.
Add as much salt as desired.
This is really good with ravioli and pasta, but I suppose you could also put it on vegetables as well.

"Creamy Broccoli and Cheese" - 4 servings
1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
8 oz. cream cheese
1/4 cup milk
1 lb. broccoli; cooked and drained
1/2 cup shredded Sharp Cheddar cheese
In blender, combine dressing mix, cream cheese and milk. Pour over broccoli in 9" baking dish; stir well. Top with cheese; bake at 350* - 25 minutes or until cheese is melted.

Blue Cheese Broccoli Casserole
3 cups broccoli florets, chopped
2 Tbsp. butter or margarine
2 Tbsp. flour
4 oz. cream cheese
1/2 cup blue cheese, crumbled
1 cup milk
1 1/2 cup crushed Ritz cracker crumbs
6 more Tbsp. butter or margarine, melted
Preheat oven to 350°. Steam or boil broccoli florets until just cooked, about 2-3 minutes; drain well. In a large saucepan melt 2 Tbsp. butter over medium-low heat.
Stir in flour. Add cream cheese, blue cheese and milk. Stir over heat until smooth. Stir in broccoli. Mix 6 Tbsp. melted butter with cracker crumbs until well combined. Stir in 1 cup of cracker mixture into broccoli mixture. Pour mixture into a casserole dish.
Bake covered for 15 minutes. Remove from oven and sprinkle top with remaining cracker crumbs. Return to oven and bake uncovered for another 15 minutes. Allow to cool for 10 minutes before serving.
