INDIAN KEEMA

1 tbsp. peanut oil
3/4 c. chopped onion
1 tsp. minced garlic
1 tsp. ginger
1 tbsp. curry powder
1/2 tsp. turmeric
1/2 tsp. coriander
1/4 tsp. cumin
1 lb. ground lamb
1 c. tomatoes, chopped
1 tbsp. lime juice
1 tsp. sugar
1/4 tsp. crushed red pepper
1 c. peas, fresh or frozen
2 c. cooked rice

Saute onion in the peanut oil. Add spices and lamb. When meat is browned, add tomatoes, lime juice, sugar and red pepper. Simmer for 30 minutes. Add peas and serve over rice. Serves 4.

KEEMA AND MATAR PULAO

1 1/2 c. rice
1 1/2 lb. ground chuck
1 1/2 lg. onions
1 tsp. ginger powder
1 or 2 cloves garlic
8 whole cloves
Frozen peas
4 oz. oil
3 tsp. garan masala
8 tbsp. yogurt
2 tsp. cumin seed
Salt to taste

Cook rice separately. Grind onion and garlic, mix in ginger. In large pan, heat oil and add cumin seed and cloves. When cloves swell, add ground onion paste and fry over low heat. Add minced meat and fry add yogurt and fry meat to rich brown. Add peas, simmer to done. Add rice, amount as desired, pot in dish, sprinkle with garan masala. Cover and cook for 20 minutes

KEEMA CURRY

1 chopped med. onion
2 minced cloves of garlic
3 tbsp. curry powder
2 tbsp. chopped fresh coriander (or parsley)
1 lb. ground lamb (or beef)
6 to 8 ripe plum tomatoes (or canned)
10 oz. frozen peas
3 tbsp. peanut, corn oil, butter (or combination)
1 1/4 tsp. salt

Saute curry powder in oil over medium heat for 2 to 3 minutes. Add onions and brown. Add garlic and coriander and stir. Add meat and brown. Add salt and tomatoes, if using fresh tomatoes first peel, seed, and slice and cover. Cook over low heat for about 20 to 25 minutes. Add peas, mix in, cover again, and cook for about 5 minutes until peas are done.
Do not use a black cast iron skillet, the curry powder will get in the pores. Frozen peas work better (and are easier) than fresh.

1 teaspoon minced fresh hot green chilies, or to taste
3 cups frozen peas
1 lemon, juiced, or to taste
2 to 3 tablespoons minced fresh cilantro, or to taste
Indian flatbreads (rotis) or tortillas, as an accompaniment

In a nonstick skillet set over moderately high heat, warm the oil until hot. Add the onion and cook, stirring occasionally, 5 minutes. Add the veal, beef, and salt and pepper to taste, and cook, stirring, until no longer pink. Add the garlic, tomatoes, gingerroot, Garam Masala, and chilies, and cook, stirring, for 5 minutes. Add the peas and continue to cook over moderate heat, stirring occasionally, for 10 minutes more, or until flavors blend. Stir in the lemon juice and cilantro and correct seasoning, adding more salt if necessary. Either transfer to a bowl and serve with warm rotis or tortillas or spoon Keema down center of bread and roll up like a burrito.

Tofu Keema

1 (16 ounce) package firm tofu
3 tablespoons vegetable oil
1 teaspoon cumin seeds
1 onion, chopped
1 teaspoon minced fresh ginger root
1 teaspoon minced garlic
1 cup frozen peas, thawed
2 teaspoons curry powder
1 cup chopped fresh tomatoes
1/2 teaspoon salt to taste
1 fresh jalapeno pepper, chopped
DIRECTIONS
Place tofu in a colander, and cover with a plate. Weight down with a skillet or some other heavy object. Let drain for 30 minutes. Place in the freezer for 24 hours.
Remove tofu from freezer, and defrost. Mince, and set aside.
Heat oil in a large skillet over medium heat; add cumin seeds, and cook until the seeds begin to sputter. Cook onion, ginger, garlic in oil until browned. Stir in tofu, peas, and curry powder; cook, stirring frequently, for 5 minutes. Then stir in tomatoes and salt. Cover, and cook for 15 minutes. Stir in chopped pepper, and cook for 2 to 3 minutes.

INGREDIENTS
1 1/2 pounds ground lamb
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons garam masala
1 teaspoon salt
4 teaspoons tomato paste
3/4 cup beef broth
DIRECTIONS
In a large heavy skillet over medium heat, cook ground lamb until evenly brown. While cooking, break apart with a wooden spoon until crumbled. Transfer cooked lamb to a bowl, and drain off all but 1 tablespoon fat. Saute onion until soft and translucent, about 5 minutes. Stir in garlic, and saute 1 minute. Stir in garam masala and salt, and cook 1 minute. Return the browned lamb to the pan, and stir in tomato paste and beef broth. Reduce heat, and simmer for 10 to 15 minutes or until meat is fully cooked through, and liquid has evaporated.

1 (16 ounce) can coconut milk
1 tablespoon ground cumin
1 teaspoon curry powder
1 1/2 teaspoons ground ginger
1 teaspoon salt
1 tablespoon red pepper paste
6 cups tomato sauce
1 1/2 cups frozen peas, thawed
1 1/2 cups chopped carrot
DIRECTIONS
Heat olive oil in a large saucepan over medium heat. Stir in garlic, onion, and tofu; cover, and cook, stirring occasionally for 5 to 10 minutes. Stir in coconut milk, cumin, curry powder, ginger, salt, and red pepper paste; bring to a simmer. Stir in tomato sauce, peas, and carrots; simmer, covered, about 30 minutes.

fresh onion ,garlic, ginger . chopped up and lightly fried in a pan.
add garam masala,paprika, jeera(cumin), curry leaves (or mild curry powder), fresh green chillis (optional), tomato fresh or tin ,
fenugreek or fresh methi. turmeric
all spices only a teaspoon of each depending on the amount your cooking cook out the spices for a few minutes then add your mince ( choice of lamb, beef, or soya)
cook the mince(grounded) untill browned off add your garden peas and some fresh corriander.

when cooking rice add some whole jeera(cumin) to the rice before cooking. (basmati rice)
natural yoghurt with a hint of mint sauce
