When my brother & sister came to visit, they stayed in the Travelodge on the Quayside (pretty central, a fifteen-minute walk or so to the heart of Newcastle) which cost them about £56 a night with 3 in the room (family room). You can get cheaper though for single/double occupancy. If you look at the Travelodge website it was the Newcastle Central hotel. It was all right as hotel rooms go, although apparently it can be noisy at weekends, but that is the Quayside for you - it is the party capital of Newcastle so a little noise is to be expected.
A popular choice is the Jury's Inn which is relatively new and I am always passing herds of lads or lasses (stag/hen parties!) on a Friday afternoon who are headed in that direction with their suitcases in tow. There are also Travel Inns and the like.

Most city centre hotels are quite pricey.
I used to work in the hotel industry.
I would advise you to book the hotel weeks, maybe months in advance, to get it at a decent price.
It all depends on how much you want to spend really.
The Copthorne group, or the Malmaison chains are reasonable, or i would go for the holiday inns, or the Crowne Plaza's.
Failing that then the travel lodges are the best, but you may find that they are not very close to the city centre.
You could also try the Ibis grp also.

try the travel lodges and the travel inn's, quite a few close to newcastle city centre, also check for some of the posher hotels with special deals on, and book quite well in advance, newcastles a busy place to try and get a last minute room

For a slightly cheaper alternative you could stay in a hotel/guest house in Jesmond which is only 2 stops on the 'Metro' from the city centre. It has it's own nightlife with lots of bars and restaurants.

the holiday inn express next to the Life Centre is central and cheap. Also the premier inn down by the waterfront , very close to all the nightlife.
I can recommend both.
