how about a crock pot...it is so nice to come home and have dinner all ready!!

Here is a nice easy..yummy recipe....

INGREDIENTS
5 skinless, boneless chicken breast halves
1/2 teaspoon fresh lemon juice
salt and pepper to taste
1/8 teaspoon celery salt
1/2 teaspoon paprika
1/2 (10.75 ounce) can condensed cream of mushroom soup
1/2 (10.75 ounce) can condensed cream of celery soup
2 tablespoons and 2 teaspoons dry sherry
2 tablespoons grated Parmesan cheese
DIRECTIONS
Rinse the chicken breasts and pat dry. Season with the lemon juice, salt, pepper, celery salt and paprika to taste. Place in a slow cooker.
In a medium size bowl mix the mushroom and celery soups with the sherry/wine. Pour mixture over the chicken breasts and sprinkle with grated Parmesan cheese.
Cook on low setting for 8 to 10 hours, OR on high setting for 4 to 5 hours.

How about some easy homemade hot pockets -
2 oz cream cheese
1 TBS mayo
1 tsp grey poupon Dijon mustard
4 slices smoked turkey breast, finely chopped
1/4 c mozzarella cheese
1 can refrigerated biscuits

Preheat oven to 400. Mix cream cheese, mayo and mustard in small bowl until well blended. Add turkey and cheese; mix well. Set aside. Press or roll out each biscuit to 3 1/2 in circle. Place 1 heaping tsp cream cheese mixture onto each biscuit circle. Fold dough over filling to make small turn over shapes. Firmly press edged together to seal. Place on ungreased baking sheet and bake 10-12 min or until lightly brown. Serve hot.
*can use ham and cheddar, or roast beef and cheddar, instead of turkey and mozzarella.

Crusty Crumbed Chicken Wings -
1 lb chicken wings
1c. bread crumbs
1/4 tsp pepper
2 tsp curry powder
1/4 c. oil
1/2 tsp salt
1/4 tsp oregano

Brush wings with oil. Combine bread crumbs and seasonings in a plastic bag. Add few pieces at a time and coat evenly. Place in large baking dish. Bake at 400* for 35 min or until crispy outside and tender inside.

This is quick and delicious:
Crab Fettuccini -
1 pkg crabmeat, chopped
1 onion, chopped
2 TBS minced garlic
2 shakes garlic powder
4 TBS butter
3 TBS Italian seasoning, more or less to your liking
1 box fettucini
1 can diced tomatoes

Cook fettucini according to package. Meanwhile saute onion and garlic in 2 TBS butter. Add seasonings and butter and stir. Add crabmeat and stir . Add tomatoes. Cook 5 more minutes to blend flavor. Serve over fettucini and sprinkle with grated parmesan.

Shrimp Scampi -
1 1/2 lbs shrimp
2 TBS Extra Virgin Olive Oil
2 TBS green onion
1 1/2 tsp each basil, parsley
2 TBS lemon juice
1/4 tsp each s&p
2 cloves garlic
grated parmesan

Heat oil. Cook all ingredients (except parmesan) in oil 2-3 min or
until shrimp is pink and firm. Remove from heat. Sprinkle with parmesan.
Can toss with fettucini

You can serve any of these with a salad, rolls, and steamed veggies. :) Happy Eating!

I like to make chicken breast ahead of time and put it in the fridge, then i just reheat it and serve it with pico de gallo salsa. Its really flavorful with the salsa and not fatty.

I also will take the chicken breast, cut it up and top it on those bagged salads you get at the store. The salsas good with that too.
