why... when baking.. do some recipes call for covering the dish with aluminum foil, and others don't? does it speed up the process? I just don't understand the point.! Thanks!

Keeps the moisture in the dish so your food doesn't dry out, and allows the heat to circle around the food instead of just heating up.

it helps to maintain an internal tempature and the product will not burn that is why some recipes like turkey will say cook so long covered in foil and cook the last so long to brown the dish ...you dont need to use just foil if your pan has a lid and it is oven proof that will work also......it just they use foil because its oven proof.....

It holds in the juices ,and it steams the food and holds the heat in Keeps it from cooking the outside before the inside gets done..

I guess that sometimes they write it in just in case people don't save their lids for those pans they have and to prevent burning of the baked good YOu know speeding up the process , keeping it moist etc.

covering can speeup process, It also helps hold moisture in in some recipes you may not need the moisture.
