3 large egg whites
1/4 teaspoon cream of tartar
1/8 teaspoon salt
2/3 cup white sugar
1/2 teaspoon vanilla

Preheat oven to 200 degrees. Line cookie sheet with brown paper bag or parchment. In a medium sized bowl at high speed, beat egg whites, cream of tartar and salt till fluffy. Gradually beat in sugar. Add vanilla. Place in pastry bag fitted with a medium plain piping tip. Pipe shapes onto parchment or brown paper bag. Bake 1 hour until set.

Now this is the important bit....
When they have been baking for an hour, switch the oven off but leave the meringues in the oven to cool, I leave mine overnight, by the next day they are all chewy and a bit beige.

OK this is your Base, add what you like from Raspberry's to Almonds to Figs, and make enough for everybody!

Basic Meringues

Ingredients

5 egg whites
1 c extra fine sugar

Instructions

Beat the egg whites in a large mixing bowl with electric mixer at high speed for 5 minutes or until stiff, but not dry. Sprinkle 1/4 cup sugar over the whites and beat for 3 minutes longer. Sprinkle the remaining sugar 1 tablespoon at a time, over the white mixture and fold in gently but thoroughly using a rubber spatula. Drop by heaping table spoonfuls, 2 inches apart, onto oiled brown paper over cookie sheets. Bake in preheated 250-degree oven for 55 minutes. Take from oven and immediately remove from paper onto cooling rack
VARIATIONS:
CHOCOLATE MERINGUES: Combine 1 1/2 tablespoons cocoa with the sugar and beat into egg whites as directed Bake for 1 hour. CHOCOLATE CHIP
MERINGUES: Fold in 1/2 cup chocolate chips into Basic Meringue just before dropping onto prepared cookie sheets.

the normal way. Egg whites, caster sugar, whipped up to peak stage. Fold in a teaspoon of cream of tartar then cook on a very cool oven gas 2. for about 2 hours.MMMMmmmm lovely and Gooey centre.

Yeah, my mum makes PERFECT ones, and she gets two of them and puts whipped cream in the middle and gives them to me and i eat them and i really like them and i'm getting all excited now and i've gotta go lie down and eat a nice cool meringue to calm down....

youhave to cook them in a very very low oven for a long time, overnight if y ou can prop the oven door open

look for a recipe that includes vinegar - my mum uses that and it works a treat! - i am not a natural cook
