Are they the 'normal' ones we see for halloween, or do they use a different type? I heard instead of using the large orange pumpkins, to use a sugar pumpkin....I'd like to use the pumpkin we'll be carving tonight for some pumpkin recipes, but I don't know how to prepare it afterwards....

They actually use a squash more than pumpkins, the orange one we see at Halloween are strictly for decoration, the taste is just not there, the sugar pumpkins and one call a Pie Pumpkin, if you use a orange one, you will need to add a stronger squash with it, a turban or I use the small frozen blocks of butter nut squash in the freezer dept at the grocery store.

If you do use one the orange pumpkin, roast it, like a squash you make for dinner, rub it with butter or what ever you use, bake it for 60-70 minutes, and this will leach all the water out, then puree it in a food processor or blender with the defrosted squash, and your usual other ingredients, I worked as a chef in Canada for 20 yrs and had a number of employers that insisted we make pies from scratch, I learned this trick and it made a very good pie, and salvaged the pumpkins for something other thean the compost pile???

I think the smaller pumpkins are pie pumpkins. Usually if they come from a grocery store they have a little sticker that says pie pumpkin. I really don't think it will matter either way. May just need to cook pumpkin longer or use more sugar. A pumpkin is a pumpkin is a pumpkin.

Pumpkin pie is used with yellow pumpkins like for Halloween.
You just take the flesh out and boil it.
