Casserole? here is an easy , yummy recipe...
INGREDIENTS
1 pound lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups crushed tortilla chips
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
1/2 cup chopped green onion
1/2 cup chopped fresh tomato
2 cups shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
Bake in preheated oven for 30 minutes, or until hot and bubbly.
or an easy pork chop casserole...
INGREDIENTS
1 (10.75 ounce) can condensed cream of mushroom soup
1 packet dry onion soup mix
1 (10.75 ounce) can water
1 cup mushrooms, diced
4 pork chops
2 tablespoons vegetable oil
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine the mushroom soup, onion soup mix, water and mushrooms.
In a large skillet over medium-high heat, brown the pork chops on each side. Transfer chops to a 9x9 inch baking dish, and cover with the mushroom soup mixture.
Bake in the preheated oven for 1 1/2 hours, or until internal pork temperature reaches 160 degrees F (70 degrees C).

How about Hooters Hot Wings! Make some fries to go with and what goes better with hot wings than Beer!
Vegetable oil (for frying)
1/4 cup butter
1/4 cup Crystal Louisiana Hot Sauce
Dash of ground pepper
Dash of garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings, cut into thirds and wing
Heat oil in a deep fryer to 375 degrees F. You want just enough oil to cover the wings entirely - an inch or so deep at least.
Combine the butter, hot sauce, ground pepper and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients well-blended.
Combine the flour, paprika, cayenne pepper and salt in a bowl.
Put the wings into a large bowl and sprinkle the flour mixture over them, coating each wing evenly. Put the wings in the refrigerator for 60 to 90 minutes. (This will help the breading to stick to the wings when fried.)
Put all the wings into the hot oil and fry them for 10 to 15 minutes or until some parts of the wings begin to turn dark brown.
Remove the wings from the oil to a paper towel to drain. But don't let them sit too long, because you want to serve the wings hot.
Quickly put the wings into a large bowl. Add the hot sauce and stir, coating all of the wings evenly. Serve with bleu cheese dressing and celery sticks on the side.

Curried Scallops -
3 TBS butter, divided
1 lb scallops
1/4 c green onion
1 TBS flour
1 TBS curry powder
1/2 tsp salt
1/2 c chicken broth
1/2 c milk
1 small tomato, chopped
Rice or Fetuccini
Melt 1 TBS buttre over medium high heat. Cook scallops 2-3 min until white, stirring frequently. Remove scallops and drain skillet. In same skillet heat 2 TBS butter. Cook green onion, flour, curry powder, and salt. Stir constantly until bubbly. Remove from heat. Stir in chicken broth and milk. Heat to boiling stirring constantly. Boil and stir 1 min. Stir in tomato and scallops. Cook @ 3 min. stirring occasionally. Serve over rice or fetuccini.

Chicken and olives
3 skinless boneless chicken breasts. cut into 1/2 inch chunks. Saute in olive oil until browned. Add 1/2 cup chopped onions and saute until soft. Add 1 tablespoon minced garlic (from a jar is fine) Add 1 cup sliced chopped olives (salad olives are fine) and a can of mushroom stems and pieces. Heat through and serve over instant rice.

Here's something easy and delicious!
Crisp & Creamy Baked Chicken
4 small boneless skinless chicken breast halves (1 lb.)
6 Tbsp. (1/2 of 1 pouch) SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
2 cups MINUTE White Rice, uncooked
2/3 cup (1/2 of 10-3/4-oz. can) condensed cream of celery soup
1/4 cup milk
1 cup KRAFT Shredded Cheddar & Monterey Jack Cheese
Preheat oven to 400°F. Coat chicken with coating mix as directed on package; place in greased 13x9-inch baking dish. Discard any remaining coating mix.
BAKE 20 min. or until chicken is cooked through (170°F). Meanwhile, cook rice as directed on package.
BEAT soup and milk with wire whisk until well blended. Pour evenly over chicken; sprinkle with cheese. Bake an additional 5 min. or until cheese is melted and sauce is bubbly. Serve with the rice.

Ever heard of Tangy sandwhichs ? Take bacon and fry it up, cut up tomatos and chucks of cheese. mix everything into a bowl adding mayo. when everything is good and mixed place on some hamberger buns and toast in the over. very yummy !
Ya wanna leave in the oven til the cheese is mostly melted !
Or taco salad ?
Thousand island dressing, hamberger, tomatos, cheese nacho cheese dortios , mix everything ( after cooking the hamburger ) into a bowl and toss in the micro wave for like 2 mins .. yummy !!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

chicken, boneless breast is best, pound out thin cook in pan with alittle olive oil until lightly brown on both sides. Remove, cook up a few sliced onions, remove, combine 2 cans cream of chicken soup or celery with one can milk or water. Add back chickn and onions. While covered and cooking on low, cook up a bag of egg noodles. Drain, put in large bowl or platter. Add one cup of sour cream and about a teaspoon of paprika, any type, to chicken mixtrure, stir to heat. Pour out over noodles. S &P to taste. Enjoy

not quite sure what you want --
try chicken marsala its chicken in wine/mushroom sauce and you can use the rest of the sauce on plain boiled potatos, just stir fry some green beans and you have some delux dinner --
