Town Creek Pecan Waffles
Total preparation time: 20 minutes
Serves: 8
Ingredients:
2 extra large eggs
1 3/4 cups buttermilk
1/2 cup butter
2 teaspoons vanilla extract
1 3/4 cups all purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 tablespoon baking soda
1 teaspoon salt
1/2 cup chopped pecans
1/2 teaspoon cinnamon
Steps:
In a medium size bowl, whisk together the eggs, buttermilk, melted butter and vanilla.
In a seperate bowl combine the remaining ingredients
Combine the wet and dry ingredients
Prepare waffle iron by spraying with vegetable oil. Preheat the iron. Pour 1/2 cup of batter onto waffle iron. Cook according to your waffle iron instructions.

Try this out...it is amazing!!! You won't have those preservatives to taste!!!
4 3/4 ounces all-purpose flour, approximately 1 cup
4 3/4 ounces whole-wheat flour, approximately 1 cup
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 whole eggs, beaten
2 ounces unsalted butter, melted
16 ounces buttermilk, room temperature
Vegetable spray, for waffle iron
Preheat waffle iron according to manufacturer's directions.
In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
The toppings are endless.

I found that the Betty Crocker Pancake Mix that just needs water added is nearly as good as home made. But.....
I add 1/2 teaspoon each of baking powder and vanilla for each batch I make.
The vanilla brings out the flavor of the mix, and baking powder makes for a fluffier waffle. My expert food analysts (16 grandkids!) all agree that they are the best.
By the way, I use mexican Vainilla that you can either get from Mexico, or from your local Mexican product grocery store or market. The three ingredients used are water, vanilla and alcohol. Be sure to check your lable prior to purchasing the bottle that the order of ingredients is: Water, Vainilla and Alcohol.
That's the best!!!!

BEST BUTTERMILK PANCAKES & WAFFLES
1 qt. buttermilk
1/4 c. oil
1 c. cream or canned skim milk
1 pkg. yeast
2 c. white flour
2 c. wheat flour
2 tbsp. baking powder
2 tbsp. baking soda
2 tbsp. sugar
1 tsp. salt
1 c. applesauce (optional)
Mix ingredients in order given. This is a very large recipe which serves 12 or you can use it over a number of days.
Can be stored for up to one week; mix up the night before using.
Store covered loosely with plastic wrap in refrigerator, leaving room for expansion as mixture will bubble up.
Note: Recipe can be halved. Over time, you may need to add water or flour to bring back the right consistency.

Krusteaz when I don't make them homemade. I don't add anything in the mix but give options for toppings like strawberries or blueberries. Sometimes I add chocolate chips for my neice. She loves chocolate!

bisquick and cook them really crispy with berries or add chocolate chips to the mix how about buttermilk and cinnamon and vanilla to the mix and butter rich syrup and maple sausage links
