Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (1.25 oz pkg) Taco Seasoning Mix
1/2 Cup Sour Cream
1 (4 oz can) Diced Green Chili Peppers
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
Instructions:
Preheat the oven to 350ºF
In a large bowl add the ground beef. Sprinkle the taco seasoning mix and blend well. Add the sour cream and diced green chili peppers; mix until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Bake for 45 minutes. Drain off any excess fat.
Remove from loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

add a 1/4 cup (per pound) of wine, broth or tomato juice to the ground meat for a really moist meatloaf.
INGREDIENTS:
2 pounds lean ground beef
1/2 cup rolled oats
1/2 cup fine dry bread crumbs
1 egg, lightly beaten
1 can condensed French onion soup, undiluted
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon dried parsley flakes
ketchup or barbecue sauce, optional
PREPARATION:
Combine all ingredients in a bowl; pack into a meatloaf pan or large (9x5x3-inch) loaf pan. Bake at 350° for about 1 hour and 15 minutes. Spread top with a little barbecue sauce or ketchup about 5 or 10 minutes before done.
Let rest a few minutes before slicing.
Serves 6 to 8.

I prefer a plain simple recipe without too much stuff in it. I start with white bread middles, 2 eggs and some milk. Blend the eggs and milk and soak the bread, add a little pepper and paprika for taste, blend it until it has a smooth consistency, but not soupy, add more bread if it is. Combine 1/3 bread mix with 2/3 lean hamburger and finely chopped onions, and bake in a rectangular pan at 350 degrees until it's brown on top, about an hour. Serve with a side of stovetop packaged brown gravy mix, or you can bake ketchup on top for the last 20 minutes, but I prefer it plain. Most grocery store meatloafs also have chopped bell pepper and other spices, but that tends to give me indigestion, plain and simple is best.

11/2 lbs hamburger (not the lean kind)
1 egg
1 can tomato sauce
1/2 c. oatmeal
1 pkg. lipton onion soup mix
1 t. sage
1 c. milk
Mix all ingredients. Put in a greased casserole pan. Bake at 375 degrees for 45 minutes. Drain grease.
Mix 1 c ketchup, 2 T. brown sugar and 1/2 t. nutmeg. Pour over meatloaf and smooth over entire top. Bake 5 minutes more and serve.

Apparantly you have to ask my husband's mother lol. Or for those of us who refuse to hear how his mother is the best cook, I've tried a few recipes. My husband's favorite was one I tried last week, that I made into meatballs, but I'm sure he'd like it just as well as a meatloaf.
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup hot water
1 egg
1/4 cup KRAFT Ranch Dressing
1 lb. lean ground beef
1 cup KRAFT Shredded Cheddar Cheese
1/3 cup ketchup
PREHEAT oven to 375ºF. Combine stuffing mix, water, egg and dressing until moistened. Add meat and cheese; mix well. Shape into eight 2-inch meatballs.
PLACE on greased baking sheet; spread with ketchup.
BAKE 30 min. or until cooked through (160ºF).
You can use store brands or whatever it's just about the same.

First thing you need is 2 lbs. hamburg, about a cup of cracker crumbs, not bread crumbs or oatmeal, 2 eggs, Worcestershire sauce, chopped onions, salt & pepper, mixed completely, put in pan, cover with catsup. You can also mix some catsup directly into the meat. Remember this is a completely personal thing, everyone does it different. Preheat oven, Bake 350 for 45 mins to one hour depending on thickness. Some people use a bread pan, I use an 8x8 brownie pan. Excellent next day sandwiches.

Besides all the regular meatloaf stuff, green pepper is a must. Shape into a flatter loaf and brown on each side in your electric fry pan. Reduce heat and pour a can of diced or stewed tomatoes over the top. Simmer until meat is done. Grandma's recipe and my favorite.

"Down-Home Meat Loaf" - 8 servings
2 eggs; beaten
1/4 cup milk
2 cups soft bread crumbs
3/4 cup finely chopped onion
1/3 cup finely chopped green pepper
2 tbsp. prepared horseradish
1 1/2 tsp. salt
1 tsp. ground mustard
2 lbs. ground beef
1/4 cup catsup
In a bowl, combine the first 8 ingredients; crumble beef over mixture and mix well. Press into a greased 9x5x3" loaf pan; bake 1 hour. Spread with catsup; bake 15-20 minutes longer or until a meat thermometer reads 160* and meat is no longer pink. Let stand for 10 minutes before slicing. Meat loaf may be frozen for up to 3 months.

I like meatloaf a lot. It is a comfort food. Don't you think? Well, I like it very moist. I use: 100% beef. bread cumbs, tomatoes, eggs, and black olives. You did not mention how many servings you need, but I think you will know once you start making it. Good luck!

take ground beef and mix in these ingredients
parsley
real onion
garlic
bread crumbs
bbq sauce
and egg
cheddar cheese
and then mix it up real well on the pan spray it and bake the meat loaf with alittle bit bbq sauce on top in the oven at 400 for an hour or till crispy yummmy
and serve with garlic cheddar mashed potatoes and fresh green beans
