Meatloaf Muffins with Barbecue Sauce
1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes at 350 degrees F. Cut open 1 muffin to test that the middle is cooked through.
Green Beans with Onion
1 tablespoon extra-virgin olive oil, eyeball it
1 tablespoon butter
1 small onion, chopped
1 cup chicken broth
1 to 1 1/4 pounds trimmed green beans – many markets have trimmed raw beans in packages in the fresh produce department in 1 pound packages
Salt
To a medium pan over medium heat add extra-virgin olive oil and butter and onion. Saute onion 3 minutes, add broth and bring to a boil. Add beans, season with salt and cover pan and simmer 8 minutes, until tender.
Cheesy Smashed Potatoes
2 to 2 1/4 pounds baby Yukon gold potatoes (You can use Russets!)
1/4 cup sour cream
2 cups shredded Cheddar
3 tablespoons chives, chopped or snipped
Salt and black pepper
Cut potatoes in half and place in a pot. Cover with water and bring to a boil. Work on other dishes while you are waiting for the water to boil.
When water boils, add the potatoes and some salt, 2 big pinches, and boil for 10 minutes or until tender. Drain and return potatoes to the hot pot. Smash potatoes with masher and combine with sour cream and cheese. When cheese melts into potatoes, add chives and salt and pepper and re-smash. Taste the potatoes and adjust seasonings.
S'Mores Sundaes
8 graham crackers, crushed or broken
2 pint rocky road ice cream
1 cup hot fudge sauce, from dessert topping aisle of market
Store bought prepared whipped cream in a spray canister
Chopped nuts and red cherries, optional
Place crushed grahams in the bottom of dessert bowls or sundae dishes. Top with rocky road ice cream, 2 big scoops for each dessert. Heat hot fudge in microwave and pour over ice cream. Top with whipped cream, nuts and a cherry.

Depending on the amount of people your serving will decide the amount of hamburger you will need. Not really a problem as meatloaf sandwiches are great.
pre-heat the oven at 325
Get the following
2-3 lbs hamburger.
1 small onion
1 egg
4-5 crackers
mix in a bowl until thoroughly mixed, get a oven tempered pan. Like a 9x11 put the formed meatloaf in the pan.
You can pour tomato sauce over it if you like.
cook for about 1 to 11/2 hours
cool for about 10 minutes
have mashed potatoes and some vegetable w/it.
I made this really simple but you can add bell pepper, garlic, or anything you fancy, meatloaf is a meal you can have your way with as you really can't mess it up. If you do you just serve it over the potatoes and give it a name.

Get meatloaf mix at the supermarket (ground beef and pork0
add one beaten egg, an envelope of Liptons onion soup mix,
1/4 cup ketchup, 1 cup bresad crumbs and enouygh milk to make a good dry not runny mixture. Put in the form of a loaf in a greased baking pan. Spread a little ktechup on the top. Put in a preheated oven at 375 for 1 hour and 15 minutes. Remove from oven and let sit out about ten minutes to firm up before slicing.
Serve with mashed potatoes and corn and you will have a feast!

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (1.25 oz pkg) Taco Seasoning Mix
1/2 Cup Sour Cream
1 (4 oz can) Diced Green Chili Peppers
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
Instructions:
Preheat the oven to 350ºF
In a large bowl add the ground beef. Sprinkle the taco
seasoning mix and blend well. Add the sour cream and diced
green chili peppers; mix until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat,
top evenly with the cheese and place the remainder of the meat
mixture on top to seal. Bake for 45 minutes. Drain off any
excess fat.
Remove from loaf pan and slice. Place the meatloaf on a
warmed serving platter and serve immediately. Serve with
mixed vegetables or a salad.

Old Fashioned Meatloaf
Meatloaf is a pretty basic, southern food. It's not healthy but it tastes very, very good.
There's about a million ways to make meatloaf but I personally enjoy it made very simply.
The following are the ingredients, but this was to feed quite a few people. You can easily cut this in half and feed two and still have leftovers for sandwiches. Cold meatloaf sandwiches are delicious, trust me.
Anyway, you'll need:
Two pounds of lean ground beef or try what I do: one pound ground turkey and one pound ground beef
Two cups of bread crumbs. I prefer the Progresso Italian kind since it adds flavor. If you don't want to use bread crumbs use 10 saltine crackers!
Worcestershire sauce.
3 Eggs.
A can of tomato sauce (around 15 ounces or so).
Ketchup.
6 to 8 slices of bacon (optional)
Just a heads up - Substituting salsa for the tomato sauce is very good if you want a little extra kick to your meatloaf. Adding chopped onions to the overall mixture is also very nice. If you like place uncooked bacon over the meatloaf mixture before putting it in the oven.
Step 1:
Mix the eggs up in a small bowl or a food processor.
Combine the ground beef, four or five shots of worcestershire sauce, the eggs, the tomato sauce, and the bread crumbs in a large bowl. Keep the ketchup to the side for now. Mix it all up with your hands until it becomes somewhat thick. Once it's thick you can form the 'loaves' on a baking sheet. When you have the loaves formed add a layer of ketchup to the top as if it were icing. Add pepper or garlic powder if you want to. Since I had two pounds of ground beef I made two loaves as shown in this picture:
Now put it in the oven for one hour at 375F. Ovens are obviously all different but meatloaf is hard to mess up. If you're unsure of whether or not it is done you can insert a fork in it. If the fork comes out clean it's probably done. You should also notice, when it's nearing completion, that the edges will be browning.
Since you have an hour to kill you can go ahead and put potatoes into the oven then work on your salad. Add tomatoes, croutons, or radish slices to the top of your salad.

I have a GREAT recipe for a Taco Meatloaf that my mother used to make when I was growing up....my brother and I loved it!!
1 pound hamburger
1 can (4 oz. size) tomato sauce
1 package (1 1/4 oz. size) taco seasoning mix
1 egg
8 taco shells, crushed
1 cup grated cheese
Combine first 4 ingredients in bowl, mixing well. Mix in taco shells and cheese. Shape into loaf in shallow baking pan. Bake at 350* for 45-50 minutes or til cooked through.
Great with Baked potatoes!

My meatloaf is pretty basic, but I've been told more than once its the best people have had.
1 1/2 lb hamb
1 onion (diced)
1 sm can tomato sauce
2 eggs
1 c oatmeal
salt & pepper
Throw everything in a big bowl & mix together with your hands. Put mixture in a loaf pan & bake @ 350 degrees for about 1 hour. I always serve with a green salad & corn. Enjoy dinner with your mom!

8 slices of cheese (I use shredded...it's easier)
2 lbs ground beef
1 1/4 cups dry bread crumbs (we like Italian flavor)
3/4 cups BBQ sauce
2 eggs
1 envelope dry onion soup mix ( I use Lipton garlic and herb)
Preheat oven to 350* (325* for glass pan). Cut 6 slices of cheese into small pieces; combine with remaining ingredients. Mix well. In shallow baking pan, shape into loaf. Bake 1 hour. Remove from oven. Arrange remaining cheese slices on top. Return to oven for 5 minutes or until cheese begins to melt. Refrigerate leftovers. Makes 8 servings.
Original recipe calls for ketchup. I swapped it out for BBQ sauce (something different). My family will eat it no other way now. My husband likes mine better than his moms.
Serve it with creamed potatoes or scalloped potatoes. Mac and cheese is good with it, too. I always cook English peas or green beans with mine.

I use a combination of pork and beef. the pork keeps it from drying out too much. I add a dash of kechup and mustard as well as half a pakc of mr noodle (ramen) and half a package of dried onion soup mix. 2 eggs, mix by hand and make into a ball. place in a non stick pan. Place in the oven for about 45 min at 350 F.
Tip on testing if it's ready. Take a knife and stick it in so that it's in the center. wait 10 seconds pull it out and touch it to the inside of your lip (or the inside of your wrist) if it's hot it's ready. if it's warm wait another 10-15 min. This is what chefs do (my fiance is one so I know for a fact)

Use ground chuck or ground beef, unless you prefer sirloin...it is great, but for a meatloaf..not enough fat to keep the loaf juicy. If you like onions,mushrooms, those type of vegetables...you can chop or mince...based on your preference...if you just want taste then mince, if you want taste and texture..chop. Bread crumbs and a couple of eggs--2 at the most. Bread crumbs can be from a can, or if you don't have any on hand...take some bread..no matter the flavor...toast and then crush...if you have a food processor..easiest way and you don't have to toast bread,if not use a sandwich baggie, and put toasted bread in, and use some pent up frustration that will crush them for you. You will need seasoning, like salt, pepper, garlic powder(if you use garlic salt then omit the salt by itself)...a lipton soup mix will do all the seasoning for you if you have one of those. A good trick is to get all these ingredients in a bowl..hands on type of thing....and add something like barbque sauce, steaksauce...something like that in the meat itself. Mix all this stuff together in a bowl...then if you have a broiling pan....place meat on it---form it into a loaf. If you are using more than 2lbs of meat...make them into two seperate loaves. Normally a red sauce, like ketchup goes on top...you can make up your own with ketchup, molasses, and salt/pepper to taste or just plain ol ketchup does the trick...adding something like molasses thickens it up. If your working from a broiling pan...add water to the bottom, underneath the broiler top to keep the loaf moist while cooking. Cover with foil for the first half of cooking time...retains moisture. Then uncover....and then add the sauce..like ketchup..red stuff..your choice to the top of your loaf...and continue to bake until your done preference. Should be juicy. Don't cook to high or too fast, you will it out. 325-350 max on tempature. Foodnetwork.com has a lot of easy recipies with measurements and stuff..might want to try that too. I know you probably don't want someone to throw a website @ you, but I can't help it. On foodnetwork.com, there's an amazing recipe called "Emeril's kicked up Meatloaf". I have made it several times, for the pickiest of eaters, and always get applause for it.
Hint: You put a couple strips of bacon on top when you put into the oven. Mmmmm... bacon. :)
