Sour cream, like any other foods, has shelf life. It means that it has only limited time to preserve its quality. That's why it has a use by date on it. Although sour cream is a fermented cream, it doesn't mean that it can no longer spoil. The bacterial culture that is in sour cream in non-pathogenic. However, if you carelessly store it or consume it beyond its expiry date, there may already be presence of pathogenic microogranisms (like molds) that may cause food poisoning.

OK, enough of that. To answer your question: Sour cream actually does go bad. Not sure exactly how it works, but cheese, yogurt, and sour cream are actually milk products and different types of bacterial cultures (don't worry; the bacteria are not harmful), so I'm guessing that if you leave the stuff long enough the bacteria either mutate or replicate themselves to the point where you don't have what you started with anymore.

Yes sour is in relation to the taste but "sour" in relation to the date of the product is when the acid in it starts reacting. It is not safe to use after the date on it!

Cos you wouldna consume it after that date wi,out risking life and limb cos shortly after it'll be unfit frae human consumption.
Apart from that what would ya want to buy sour cream fer?

Because it will go off in a bad way, when you buy it is has been controlably soured.

All foods have a sel by date on them regulate dby the FDA to assure that your foods are sold to you by a reasonable date to insure freshness/

it does grow mould i don't think any one wants that in their sour cream do you?

It can go bad and grow mold like any other dairy product.

becase it can go bad and if you eat it after that date and get horribly sick you cant sue them for it
