Here is the mystery. It doesn't really matter whether you've made the mayo yourself or if ypu've gotten it from the grocery store - eating it after it's been left out PROBABLY isn't the best idea. The egg in the mayo won't hurt you because the grocery-bought mayos use dehydrated egg or pasteurized egg, both of which are bacteria-free. Also, if you've made mayo, you have enough lemon juice in it that would have cured or cooked the egg within about 4 hours. But, the catch 22 is that the ingredients in it won't make you sick, per se, but there are bacteria (ie. botulism) that can be introduced through the air, from fingers, knives, etc. that can make you horribly sick or even kill you.

Yes! No more than 2 hours out of the fridge. I first learned that at the wine auction. Then I learned it again in foodsafety classes. Mayo goes bad fast in warm temps.

The mayonnaise itself doesn't become poisonous, but Salmonella can grow in it and that can make you good and sick.
