Get them spayed, keep the litter tray away from their food, and most importantly, make sure their tray is always clean. Cats are really very clean animals and they wont go on their tray if it smells bad.

You don't say how long they stopped, or how many cats. I've found that cats are often very picky about litter, they want a clean toilet to use and if the litter gets to where a cat thinks its too dirty, it will refuse to use the pan. In that case, changing the litter will solve the problem (and it also helps to have more than one litter pan. How many litter pans to put down, depends on how many cats you have.)
Sometimes if you have changed the type of litter you're using, that will make a cat stop using the pan. I've had some cats that hated the clumping type litter and refused to use it, and once there was a chlorophyll based litter I tried and all the cats hated that.
Some cleaners used to clean a pan can make a cat stop using the pan. Lysol in particular, can even make a cat feel sick to smell it. To clean a litterpan, ordinary dish soap and water is best. Vinegar is good to put on a spot where a pet has had an accident. After cleaning up the mess, apply vinegar to the spot and it will help neutralize the scent so the animal won't be attracted back to that spot.
Have you moved the litterpan? I've found that cats prefer the litterpan to be in an out of the way place, not where theres a lot of noise and activity. Covered litter pans are ideal for cats who get urine outside the pan when they urinate, although I've yet to see a cat that would use one with any kind of swinging door on the front. My cats all want the entrance to the litter open.
Sometimes cats who have intestinal parasites will defecate outside the litter, and having the cat dewormed will help.
Sometimes too, a cat with a urinary problem will urinate outside the pan to try to get your attention to the fact that something is wrong. Cats with urinary problems often will urinate in different parts of the house, often right in front of you. I remember one cat that went over and peed right on the paper his owner was reading, the urine was bloody and the owner immediately knew that cat needed the vet. She took him to his vet and sure enough, he had cystitis. Male cats in particular, need to be seen by a vet right away if they show signs of urinary problems, because a male cats urethra is narrow and can become plugged so the cat can't urinate. A 'plugged tom" (and neutered males can have the problem too!) is a life threatening condition, necessitating a vet's treatment ASAP.
I once had a cat who came from a place where the litterpans were kept filthy and he wouldn't use litter. I put him in a cat cage, lined solidly with either pans of litter or pans of paper. He had to use a pan, there was not anyplace in the cage without a pan, except a "hammock" bed hanging in one corner. He started using the litter pans and I kept them very clean, and after a month of this, I then put him in one room and he continued to use litter consistently (and again, the pan was kept very clean). I've used that method to successfully rehab other cats who refused to use litter and where medical causes, etc, are already ruled out.
However, if you have a cat you suspect has urinary problems, the quickest way to find out who is doing what, is to cage the cat so you can see whether there's a normal amount of urine in the litter or not. Its hard to know who is doing what when cats are in a group, unless you catch one in the act.

usually, cats won't use the litterbox if it smells or is full. Try cleaning it every other day or so, and they should start using it again. Especially with multiple cats, it's important to keep fresh litter in the box (I have a cat, and she does the same thing if it smells).

If it is dirty, clean it.
If you have been using the clumping kind, you still need to change the whole thing every once in a while since small particles with urine and feces don't get sccoped...you may not smell it, but you betcha your cats will. It can also cause health problems.
If you have more than one cat, you need more than one box...the rule is one for every cat and one more, so:
1 cat - 2 boxes
2 cats - 3 boxes
3 cats - 4 boxes.

Good Luck! If they aren't spayed/neutered...that's a start...they may also have a bladder/urinary tract infection, should probably be checked by a vet. Are you certain it's more than one cat? I was having this problem a few months ago...locked the cats in the basement, letting them upstairs one at a time until I found out which one it was...I had to get rid of the cat...after 10 years......in my experience... (have had cats for nearly 35 years)...once they start spraying..they don't quit!

they each need their own litter boxes, and they need to be kept very clean. It is said that if it gets too stinky, they will go elsewhere so the stink doesn't get so strong that it will attract other animals that want to eat them....sometimes they still think they are in the wild!!

Demonstrate to them the proper use for the box. Poop in it once while they watch. Then they will realize its ok to go there again.
