That depends on what caused your weight loss. How you regain will depend on whether you lost because of dieting, illness, malnurishment, anorexia, bulemia, etc.
Typically, to gain weight, you simply eat more...take in more calories than you burn, and you'll gain weight. The question is, why were you eating "less"???
If you go back to eating normal well balanced meals, you should gain your weight back to where you were originally. Another option is to work with weights and try to increase muscle mass weight...don't just pig out and eat hi calorie foods, cuz all you'll do is add fat to your body. Fast weight gain is no better for you than fast weight loss...so do everything in moderation. Just eat well balanced meals, try to push proteins and lift weights. You'll gain "good" weight.
If you just want to pack on pounds quickly, hit high carb foods, like pastas, breads, peanut butter, and deserts. It's terribly stupid to do that, though. Could cause health problems, like hypertension, type 2 diabetes, and strokes, among other things.

If you want to gain back healthy muscle and not just fat, eat more protein, complex carbohydrates (whole grains) and vegetables. You should also add a weight training routine to help insure that what you gain back is lean muscle and not fat.
If you go the way the other person recommended, and just eat lots of pasta, breads and junk food, you will gain weight but you will be gaining almost 100% fat and that is very, very bad for your health, plus you won't look very attractive.

To be healthy about it, increase your intake of protein. You could even try a protein supplement drink. Adding carbohydrates like pasta and bread is also okay, but protein helps build muscle mass, and the carbohydrates are easier for the body to turn into fat. Sugars, especially, and fats will make you gain weight, but not in a healthy way. Also try bulking up at the gym by doing low-reps of your near max in weight. One final thought, it's not healthy to gain or lose weight too quickly.

Carbs.... sugars and desserts will screw up your metabolism big time! Treat yourself with some ice cream every once in a while, I highly recommend Ben and Jerry's as the ultimate depression lifter.. :)
