I don't have any rice wine on hand. All I have is red wine vinegar and white wine vinegar. I really want to make my own sushi instead of going to King Kullen and buying it for $4.99.

Rice wine vinegar is milder than the 2 you have, but if you don't want to buy any, I'd suggest the white wine vinegar. It cuts some of the stickiness of the rice as you roll it up.

I disagree with the first answer. I think you should use the red wine. It has more flavor, and it tastes closer to rice wine. Really, you don't need vinegar at all...I've made sushi many times without it (and with lots of crazy ingredients I had in my fridge!!!)

I don't believe you have to use vinegar. The reason it is added is to recreate the historical taste of sushi prior to refrigeration and uniform sanitary conditions. In essense, sushi had a slight sour or bitter aftertaste.
