Cream-Filled Banana Cupcakes

1 (18.25-ounce) package banana cake mix
3/4 cup finely chopped nuts
2 tablespoons granulated sugar

Cream Cheese Filling (recipe follows)
Prepare Cream Cheese Filling; set aside.
Heat oven to 350°F.
Line muffin cups (2 1/2-inches in diameter) with paper bake cups.
Prepare cake batter according to package directions.
Fill muffin cups 1/2 full with batter.
Spoon about 1 teaspoonful Cream Cheese Filling into center of each cupcake.
Stir together nuts and sugar; sprinkle about 1 teaspoonful over top of each cupcake.
Bake 20 minutes or until wooden pick inserted in cake portion comes out clean.
Remove from pan to wire rack. Cool completely.
Makes about 3 dozen cupcakes.

Cream Cheese Filling:

1 (8-ounce) package cream cheese, softened
1/3 cup granulated sugar
1 large egg
1 cup HERSHEY'S MINI CHIPS Semi-Sweet Chocolate
Beat cream cheese, sugar and egg in small bowl until smooth.
Stir in small chocolate chips.

Ingredients:

3 oz. softened cream cheese
1/4 cup softened butter
2 cups confectioner's sugar
1 tsp. vanilla
1 to 2 tbsp. milk

Directions:
Beat everything together except the milk. Add milk by 1/2 tbsp. and mix until frosting is of desired consistancy.

Banana Chocolate Chip Cupcakes

Ingredients:
1-3/4 cups all-purpose flour
1-1/4 cups sugar
1 tablespoon Clabber Girl Baking Powder
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
3/4 cup mashed ripe bananas (about 2 medium)
1/3 cup evaporated milk
2 teaspoons vanilla extract
2 eggs
1 package (6 ozs.) semi-sweet chocolate chips

Mixing Directions:

Preheat oven to 375° F. Prepare cupcake tins by placing a cupcake liner in each pocket.

In a large bowl, sift together flour, sugar, Clabber Girl Baking Powder and salt. In a separate bowl combine mashed bananas, milk, vanilla extract and eggs. Add banana mixture to flour mixture and beat on medium until blended, then beat 3 minutes longer.

Stir in chocolate chips.

Pour batter into greased muffin cups, filling about 3/4 full.

Baking Directions:
Bake 20 minutes or until a toothpick inserted in center comes out clean.
Remove from oven and place cupcake tin on wire rack to cool. Cool for 10 minutes, then remove cupcakes and place on wire rack to cool completely.

While cupcakes are cooling, make frosting - you can frost with any home made frosting,or use a prepared frosting in a can.
Assemble decorating supplies - candies, mini chips or chopped nuts.

Decorate cupcakes after they are completely cooled.

Makes 24 cupcakes.

Banana Cupcakes
8 Servings

Ingredients

3/4 c all-purpose flour
1 1/2 ts baking powder
3/4 c sugar
3/4 ts ground cinnamon
1/2 c egg substitute
3 tb water
1 tb vegetable oil
1 ts vanilla extract
1 md banana, mashed
1 powdered sugar

Instructions

Place paper baking cups in muffin pan, and coat with vegetable cooking spray. Combine flour and next 3 ingredients in a large bowl. Whisk together egg substitute and next 3 ingredients. Stir in banana. Add to dry ingredients, stirring just until moistened. Spoon into baking cups, filling two-thirds full.

Bake at 350 for 25 minutes or until a wooden pick inserted in center comes out clean. Remove from pans immediately, and cool on a wire rack. Dust with powdered sugar.

These treats are delicious with or without the vanilla frosting.

1/4 cup butter or margarine, softened
1 1/2 cups sugar
2 large eggs
3 small bananas, mashed (about 1 cup)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/8 teaspoon salt
1/3 cup buttermilk
1 cup (6 ounces) semisweet chocolate morsels
Vegetable cooking spray
1 (16-ounce) container vanilla frosting (optional)

Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, banana, and vanilla, beating until blended.

Stir together flour, soda, and salt. Add flour mixture to banana mixture alternately with buttermilk, beginning and ending with flour mixture; beat at low speed until blended after each addition. Stir in morsels.

Place paper baking cups in muffin pans, and coat with cooking spray; spoon batter into pans, filling cups two-thirds full.

Bake at 350° for 17 minutes. Remove cupcakes from pans immediately, and cool on wire racks. Spread with frosting, if desired.

Yield: 1 1/2 dozen
