GRILLED FRESH FISH

1/2 c. (1 stick) butter
1/4 c. fresh lemon juice
1 tbsp. chopped fresh dill, parsley, savory or chervil or 1 tsp. dried herb, crumbled - ginger
1/4 tsp. salt
1/8 tsp. pepper
2 lb. fresh salmon, cod, or halibut steaks (1" thick)

1. Melt butter in small saucepan. Add lemon juice, herb, salt and pepper for Herb-Butter Baste.
2. Place fish on well-oiled grill or in a hinged rectangular wire grilling rack. Brush fish with herb butter. Grill about 4-6 inches from gray-ashed coals 6-8 minutes. Baste with herb butter. Carefully turn; baste again. Cook another 6-10 minutes or until fish flakes when tested with a fork. Remove to serving platter; spoon remaining herb butter over steaks. Garnish with watercress, and lemon and lime slices, if you wish.

GRILLED CAJUN FISH

Any kind of fresh fish fillets
Peanut oil
Cajun seasoning
Lemon pepper seasoning

Charcoal or gas grill can be used. I use a griffo grill too!
Coat both sides of fillets with peanut oil. Place on griffo grill or foil lined grid. Sprinkle with Cajun seasoning and lemon pepper. Let cook for approximately 8 to 10 minutes, turn and sprinkle other side with seasoning.

Besides those screens that you can use for fillets (or aluminum foil), there's a grilling tool shaped like a fish that you can use for a whole fish.

My family used to have one of those, which came from a gourmet cooking store. We'd put herbs (I think it was fresh fennel fronds) in the cavity of the fish, along with thin slices of fresh lemon, and salt and pepper. Then we'd put the fish into the "fish grill" which latches closed, put it on top of the barbecue, and grill it. We may have basted it some with maybe lemon and butter. It was soooo good. I can't remember where we have stored the fish grill.

If your doing fillets, it's best to get a pea screen sheet so your fish wont fall through when it gets done. You can also wrap it in aluminum foil with plenty of lemon juice and real beutter!! yummy the foil method may take 15 to 20 min's if you use an open grill with peas screen About 3 to 4 min's each sided depending on the thickness of the fish. Enjoy!!!!

you need to be more specific on what kind of fish and what cut. It makes a big difference. Generally a filet can be cooked in a foil boat with butter and seasonings. Some cuts can be grilled directly on the grill.

Many ways. Consider how to season. Either salt pepper b utter, or add onions, parsley, green pepper, etc.

Place directly on grill (if not a flakey fish like cod)

Put in a fish grill and it holds the fish together

or wrap the whole thing in foil and foil bake on th gril. usually the easiest. .

my fav way to cook fish outside is to wrap each fillet in foil, then add lemon and spices. Gives it a nice flaver, the fish doesn't fall apart all over the grill, and each little packet is perfect for serving! I like mine spice....I can't remember exactly what spice I use, but it was red.

Grilled Fish with Cucumber-Tomato Salsa:

1 1/2 teaspoons ground cumin, divided
1/2 teaspoon salt, divided
1 teaspoon grated lime rind
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 cucumber, chopped
1 cup grape tomatoes, halved
1 green onion, thinly sliced
1 jalapeño, seeded and minced
1 tablespoon chopped fresh mint
1 pound firm mild fish fillets

Combine 1 teaspoon cumin, 1/4 teaspoon salt, lime rind, lime juice, and olive oil in a medium bowl. Add cucumber, tomatoes, green onion, jalapeño, and mint. Set aside.

Sprinkle remaining 1/2 teaspoon cumin and remaining 1/4 teaspoon salt over fish. Grill over medium-high heat 7 minutes or until tender. Top with salsa, and serve.

Note: Any seafood tastes great paired with this simple cucumber-tomato relish--just buy your favorite. If you choose a thin fillet such as flounder, place on heavy-duty aluminum foil to keep the fish intact while grilling.

Yield: Makes 2 to 3 servings
