I love to bake the large leg of venison. I marinate it overnight (at least) with a mixture of Worcestershire sauce, soy sauce, a bit of apple cider vinegar, garlic powder, onion powder, pepper, and a little catsup. I add some water to this marinade and put all of it in a large plastic bag and refrigerate. I turn the bag every hour or so( when I'm awake.)
When I'm ready to prepare it, I rinse the marinade off and discard it. I rub cooking oil over the meat on all sides. Then I stick a knife into the meat where the muscles join and put whole clove of garlic in each slit. I use probably 6 or 7 cloves for a large piece. I lay slices of raw bacon on top of the meat and slice an onion on top of the bacon. I put a cup or so of water in the roasting pan and cover it with heavy foil. Roast slowly at 350' for several hours, basting often and adding water if needed. Give it plenty of time to get super tender. Uncover the meat when it's almost done to let the bacon brown. OH IT IS SO GOOD!
We have this on SuperBowl Sunday with baked potatoes, a crisp salad and some fruit.

Side dishes that go well with beef also go with venison. I've always taken the meat off the bone so that I can soak in milk. Takes some of the "gamey" flavor out of it. I also cook in the crockpot with typical roast beef spices.

Sweet Potato- it goes well with anything. Can't advise on cooking though... ewww... lol
