Ingredients:
8 medium red potatoes
1/2 cup sour cream
1/2 cup prepared ranch style dressing
1/4 cup bacon bits or cooked bacon, crumbled
2 tablespoons minced fresh parsley
1 can cream of mushroom soup
1 cup cheddar cheeese, shredded
***Topping***
1/2 cup cheddar cheese, shredded
2 cups corn or bran flakes, crushed
1/4 cup butter, melted
Directions:
Cook potatoes, with skins on, until tender, cut into quarters and set aside. Combine next 6 ingredients, and pour over cooked potatoes, mix well. Place potatoes in a greased 13x9 inch pan. Top with cheese. Combine flakes and butter, sprinkle over casserole. Bake at 350 F for 40-45 minutes.

"If you love cheese and love potatoes you'll adore this delicious recipe! You can use any three cheeses you like, but I find using a sharp cheddar, freshly grated Parmesan or Romano cheese, and thin sliced provolone (because it melts very well) are the best! Takes time to cook, but the result is so yummy and the smell is intoxicating!"

INGREDIENTS
1 1/2 pounds Yukon Gold potatoes, thinly sliced
2 tablespoons butter, divided
1 pint heavy cream
2 cloves garlic, thinly sliced
1 pinch salt and pepper to taste
2 cups shredded Cheddar cheese
4 slices provolone cheese
1/2 cup grated Parmesan or Romano cheese
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over. Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese. Season again with salt and pepper.
Bake for 1/2 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top. This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.

Potatoes au gratin -
2 lb thin skinned potatoes
1 small onion, chopped
1/4 c butter, softened
3 cloves garlic, minced
2 1/2 c swiss cheese, shredded
2 eggs
2 c whipping cream
salt & pepper
nutmeg
Peel potatoes and cover w/cold water. Cut into thin slices and return to cold water. Combine 2 TBS butter w/ 1/3 of the garlic. Rub mixture on bottom and sides of shallow 2 qt dish or 7x11 pan. Drain slices and pat dry. Toss 2 c cheese, onion, and remaining garlic. Layer potatoes, cheese mixture, s,p,nutmeg. @ 4 layers. Beat together eggs and whipping cream. Spoon over potatoes. Sprinkle w/remaining cheese and dot with butter. Bake uncovered at 359 for 1 1/2 hours or until brown and potatoes tender.

Polish Potato Salad -
6 or 8 large potatoes, cubed
16 oz sour cream
1/2 pkg bacon, cooked and crumbled
2 green onions, diced
1/4 c green olives, sliced
Place cubed potatoes in cold water and place on stove. Boil until tender. Drain and put them in a mixing bowl. While potatoes are still warm, mix with sour cream and bacon. Add chopped and sliced vegetables. Mix well. Chill to blend flavors.

Try ranch style mashed potatoes. I came up with this recipe on my own and I never use exact measurements. You can adjust any of the following ingredients to suit your taste.
I usually start out by shallow boiling 4 cloves of whole garlic and 6 potatoes that have been peeled and chopped. After the potatoes are fork tender I mash them with a fork and then add about 2 tbsp. of butter, 1/4-1/2 cup sour cream, the juice of 1 lemmon, dried or fresh dill and thyme leaves to taste, salt and pepper. Then I go in with the hand held mixer and whip them up nicely. If you find they need a splash of milk...go for it.
As you can see it requires a bit of ingredients but they are all easy to remember and none of them have to be exact as most of the time people make mashed potatoes to suit their own taste buds anyway. Please try them...you will enjoy.

This is a good easy recipe.
Parm potatoes
Poke about 4 or 5 med. potatoes
Put in microwave for about 6 mins. Until they are semi soft.
In a large pan saute onions and butter.
Cut up potatoes and place them in the onion and butter.
Coat the potatoes with the butter sprinkle Parmesan cheese and garlic on them. Cook for about 20 mins and stir occasionally. Good luck these are also good for breakfast.

"Golden Scalloped Potatoes" - 8 servings
1/4 cup butter
3 tbsp. flour
1 tsp. salt
Dash pepper
3 cups milk
5 large Yukon gold potatoes; peeled and thinly sliced
In large saucepan over medium heat, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk; bring to boil. Cook and stir for 2 minutes or until thickened and bubbly.
Place potatoes in a greased 9" square baking dish; add sauce and stir gently to coat. Cover; bake at 325* - 30 minutes. Uncover; bake 30-40 minutes longer or until potatoes are tender.

Potato Salad goes great with ribs.
Boil potatoes in a large pot for 45 to 55 minutes. When finsihed, run cold water on them. Place in refrigerator. When completely cooled, peel and cut up potatoes into squares. Add chopped boiled eggs, chopped onion, chopped green peppers or celery, which ever you prefer. Seasoned salt, black pepper, a little mustard, and mayonaise. Mix well and chill in the frig.

If you are having ribs and want another finger food to do with them you can always do Potato skins with bacon, chess, and chives with sour cream on top.
1 potato per person approx bake in oven @ 350 until done make sure not over done.
when done scoop out the insides and save for tom morrow nights mashed potatoes. then fill with Cheddar and jack cheese mixed put bacon bits on top of that place on cookie sheet in oven and cook until cheese is melted remove from oven top with sour cream and chives and serve. yum yum

Cut each potoato in to slices. Fry them in butter for 5 mins. Then add oil. Fry for a further 5 mins (or until going brown). make sure they are cooked on the inside. Seve with chess source. This might work might not. Lost the recibe agges ago. But this the way i cook them. Oh and dont forget to stir every now and then to stop them sticking.

This one is simple & good.
Red potatos, cut into 4's, boil until tender, drain
Add
Salt Garlic power, butter, parsley & milk
Stir.
Milk will soak into the potatos after a few minutes & leave very creamy & tasty. We had it last night, there's no leftovers :-)

Mashed potatoes made with chicken broth, butter & lots of black pepper, yummy!!!!!!!! & simple to fix, this is the only way we have mashed potatoes. Add a few dried onions, too.
