I have a bread machine in my kitchen, and am trying to make Buckwheat bread and 12 Grain bread. The problem is that the bread never rises properly, the top always collapses. Does anyone know why this is happening and what can be done to fix it? or perhaps a different recipe that you can suggest?

OK, I've seen this happen and it's got to do with the yeast being too active in the beginning of the rising. The problem with a bread machine as opposed to an oven is that the dough sits in it while it's heating and this is when the problem tends to occur.

You might try reducing the liquid in your dough, or transferring the dough to a regular (pre-heated) oven for baking.

you need to add more wheat gluten. It is very expensive by the pound, but you need only 2 T for a loaf of bread. I have found it at health food stores.
