I have a great recipe for spaghetti squash that should please you, as a vegetarian, and your boyfriend, the meat eater. It is very healthy, and don't let the word "squash" scare you because once you make this meal you can't even taste a squashy flavor.
Spaghetti Squash
1 spaghetti squash
1 lb. ground turkey
1 onion
3 cloves garlic
1 jar of your favorite spaghetti sauce (I prefer Prego)
1/2 lb. grated cheddar cheese
Cut the spaghetti squash in half the long way. Scoop out all of the seeds. Place 1/2 of the squash cut side down on a dinner plate. Pour onto the plate approx. 1/2 cup water. Cover with saran wrap and microwave for 13 minutes, until somewhat soft.
Carefully take the squash off the plate to cool and repeat with the second half. O.k. now that was the hard part.
Next, in a large pot pour a small amount of olive oil, or any oil in the bottom and put stove on high. Add your ground turkey, diced onion, and diced garlic. Cook until it begins to brown. The turkey will release some juice as it cooks, keep going until it evaporates and begins browning. When meat is done turn the stove off.
Take the cooled spaghetti squash and scrape the inside of each with a fork and it will come out in strands like spaghetti. Add all of this to your meat and stir it in to combine. Next, add your cheddar cheese and combine that. Then add approx. 2-3 cups of spaghetti sauce and stir. You just want enough sauce to bind everything, don't make it soupy.
In a baking dish, spray some cooking spray and pour everything in the dish. Smooth it out and cover with aluminum foil. Bake at 350 for 45 min. or until hot. Basically everything is cooked and you could eat it right away from the pot. But, I just made this today and I do it early so all I have to do is cook it in the evening. Make some good garlic bread and a salad. If you ever want to make this vegetarian just leave out the meat. I'm telling you my father hates squash but he loves this dish and so does my 6 year old son. Once you have made it you will see how easy it is! When it comes to the spaghetti sauce you can make it anyway that you like it. You really can't ruin this dish. The easiest thing would be a good steak with chips. You could also have mushrooms baked with olive oil and roasted peppers. That way you can have something nice at the same time. Buy sirloin. If you can get meat that has been aged at least 21 days all the better. Most good supermarkets sell a premium range. If you don't have a griddle pan use a heavy frying pan. Smear the meat with oil, season it with black pepper and put into the very hot pan. 1 or 2 min each side will give you a very rare steak. Better to under cook it ( you can alwys put it back in the pan if he wants it more cooked.) Let it rest for as long as you cooked it. He'll love you for it! Serve it up with a cold bear and he will be your slave forever!

Why not make a lasagne? You could make half with ground turkey or italian sausage, which you cut into slices then cook in a frying pan on low heat. You can add zucchini, spinach,mushrooms,ricotta cheese (or cottage cheese). Buy the lasagne noodles that don't have to be cooked first. The boxes come with a recipe on the back and the best part is you can add any veggies that you want for yourself. At the very most, you'll get buy with only 2 dirty pans. The one you cook the meat in and the one you bake the lasagne in, which should be an oblong casarole dish.

This dish you can basically throw it all together, stuff it in the bell pepper, and bake. It will look like you took a lot of time for something so easy! Serve with salad and maybe some garlic bread... good luck! Don't forget the candles!
Classic Stuffed Peppers -
2 medium green peppers
1 egg, slightly beaten
1 c meatless spaghetti sauce
1/4 c uncooked instant rice
1 TBS finely chopped onion
1/4 tsp salt
1/2 tsp worcestershire
dash pepper
1/2 lb ground beef
Cut tops off peppers and remove and discard seeds. In a large saucepan, cook peppers in boiling water for 5 min. Drain and rinse in cold water. In a bowl, combine egg, 1/4 c spaghetti sauce, rice, onion, salt & pepper, and worcestershire. Crumble beef over the mixture and mix well. Stuff into peppers and place in an ungreased 1 1/2 qt baking dish. Pour remaining sauce over peppers. Cover and bake at 350 for 50-55 min.

OR maybe a nice juicy steak! Men love steaks...this would be good with some steamed broccoli and baked potato with the trimmings....
1/4 c worcestershire
1/4 c red wine vinegar
1/4 c dijon mustard
2 TBS Olive Oil
1 tsp onion powder
1 tsp garlic powder
2 lb boneless sirloin or top round steak (1 1/2 " thick)
Combine all but steak in large baggie and mix well. Add steak and marinade in refrigerator @ 30 min. Grill or broil steak @8 min. per side for med-rare (another 2 min per side for medium-well{no pink inside}). Let steak stand 5 min. before slicing.

If you have access to a BBQ, I have a great recipe for pork chops. Get some pork chops, take some Olive Oil and some Montreal Style (or any other style) steak spice. (Usually made by Club House). Take a brush and brush both sides of the pork chops with the Olive Oil, then sprinkle the spice generously on both sides. Then grill it. Make sure you dont burn it, they should be nice and juicy, and turn from pink to white on the outside.
Another thing you can do, if you want to stay away from the grill is to make a Meat based spaghetti sauce. Chop carrots, celery, onions and mushrooms into a pot with olive oil, cook until soft. Add 1 pound of lean ground beef, and sir until the meat turns from pink to brown. Than add a jar of your favorite tomatoe sauce, a sprinkle of white sugar and cinnamon for flavor and serve on freshly cooked pasta. The nice thing about this recipe is you can make two sauces, one with meat and one without meat, so you can both enjoy it. Just split the recipe in half, and cook two pots one with meat and one without! Enjoy!

Fillet Steak and Chips
Servings: 4
Level of difficulty: Easy
Preparation Time: 30 minutes
Cooking Time: 25 minutes
Ingredients
450g Desirée potatoes, cut into chips
4 x 225g fillet steaks
salt and fresh ground black pepper
1 tbsp vegetable oil
Assorted peppery salad leaves, to serve
Method
1. Wash the chips thoroughly to remove any starch and dry them well with kitchen paper.
2. Heat some oil in a deep fat fryer or heavy based saucepan, to a temperature of 120°C. Cook the potatoes for four minutes, until soft but not coloured. Drain the chips and lay them on greaseproof paper.
3. Season the fillet steaks. Heat a little oil in a frying pan over a fairly high heat and fry the steaks for two minutes on each side.
4. Heat the oil the deep fat fryer to 190°C and refry the chips until golden and crisp.
5. Serve the hot steak and chips immediately with a mixed salad of peppery leaves.
Use oven chips for a healthier option and maybe a green salad to go with

barbecued short ribs
2 - 3 Beef Short Ribs
1/2 Cup ketchup
1/4 Cup vinegar
1/4 Cup Water
1 tsp chili powder
1 tsp paprika
2 tsp salt
One onion
Brown short ribs on all sides for about ten minutes. Place in casserole, slice onion on top.
Mix remaining ingredients together and pour over meat.
Cover bake for 1 to 1 1/2 hours or until tender
or
stuffed chicken
Boned chicken breast
Marinate in Italian Dressing overnight.
Stuffing
1 cup of bread crumbs to two cups of cornflake crumbs.
Sautéed celery, onion and green peppers.
Boil 2 cups water, use 2 tbsp. chicken fat and 1 bouillon cube.
Add sautéed vegetables to crumbs.
Add liquid to desired consistency.
Season with salt and pepper.
Stuff breast and secure with toothpicks.
Roll breast in cornflake crumbs.
Bake skin side up in leftover marinated
Can be partially baked early in the day and finish before serving.
Bake approx 45 minutes

go out a buy yourself a fajeta kit, it comes with salsa, fajita spices and tortilla wraps. buy fajita meat (ask the butcher even if its in the supermarket), one red and one green bell pepper and one large onion.
slice all the meat and veggies same size.
cook the meat with half the supplied spices in a very very hot skillet or wok. remove. cook off the veggies with the other half of spices. remove. plate by seperating the two on one dish. heat the wraps in the microwave (read the directions) pour out the salsa in a small bowl, if you have sour cream put some in another small bowl.
serve chips and salsa / guacamole on the side.
throw away that box, he'll never know it was a kit.. and you'll love it too b/c you can eat the veggies.. you can cook more veggies for you, like spinach, or mushrooms..
and you have a make your own fajita night!

MEDITERRANEAN CHICKEN SOUP
Heat 2 tablespoons of olive oil in large saucepan over moderate heat for 1 minute.
Add 1 onion, chopped, and saute until limp
Add 3 cloves garlic, thinly sliced.
Stir in 1 large red pepper, diced and 1 small green pepper, diced, and cook over moderately low heat until the peppers are glossy and crisp-tender. Stir occasionally
Add 250g baby marrows, halved length ways and sliced about 5mm thick, and half a teaspoon dried majoram.
Cover and cook, stirring occasionally , until the baby marrows are tender.
Add 1 tin peeled and chopped tomatoes.
Cover and simmer for 5 minutes.
Add 4 and a half cups chicken stock and bring to boil.
Add 175g broad egg noodles and boil for 5 minutes.
Add 600g skinned and deboned chicken thighs, cut into 1,5 cm cubes, and quarter teaspoon salt.
Cover and simmer until chicken is cooked through
This recipe is fairly easy since everything is in one pot. You just need to prepare the veggies!
