the stem can be eaten the large part but you have to peel it or it will taste as if it has wood on it as far as the tasiest bit i would go with the flowerettes and the small stems which hold them on.....

Mmmmm the stem is definitely the tastiest bit. I hunt through the broccoli at the supermarket to find one with a decent stem on it!

If you will try cutting the first inch off the bottom of the stems and then steam them for about 35 to 45 minutes they will be tender and just as good as the florets. At least they are to me.

The stem of broccoli and cauliflower is great raw, with the outer skin removed. Crunchy and sweet.

the flower is tastiest - but you can use the stem - just slice alway outer layer and cut what left in spears and cook spears and flowers together -- add some onion and garlic powder, black pepper. taste great!
