I think the easy way is to clean them, sprinkle with cinnamon and sugar and bake them.
But then there's this one. I saw it last night on the Food Network with Sandra Brown:
Caramelized Pumpkin Seeds
Recipe courtesy Sandra Lee
1/2 cup butterscotch caramel sauce
1 cup brown sugar
1 teaspoon cinnamon extract
1/2 teaspoon cayenne pepper
3 cups pumpkin seeds, roasted
1 cup almonds, crushed
Lightly coat baking sheet with cooking spray and set aside.
In a large skillet, slowly melt the caramel sauce and sugar. When melted stir in cinnamon extract and cayenne. Continue cooking until mixture reaches a temperature of 310 degrees F. Stir in pumpkin seeds until completely coated. Spread caramelized seeds onto the baking sheet and sprinkle with crushed almonds. Separate seeds with wooden spoon until cooled.
Cook's Notes:
Melted sugar is very hot. Please use extreme caution when handling and pouring. Pumpkin seeds may be purchased already roasted. If using the seeds from a jack-o-lantern, rinse and clean seeds. Place on a baking sheet, lightly coated with cooking spray, in a preheated 250 degree F oven. Roast seeds for about 1 hour stirring every 15 minutes. The actual seed of the pumpkin is inside the hull. The hull is edible.

I rinse them well using a strainer, soak them in salt water for about an hour. Then drain the water, cover a greased (vegatable oil) cookie sheet with foil, spread out the pumpkin seeds, sprinkle with salt while they are still wet and bake at 350 until crisp. Watch them closely and test taste while they are cooking to get them just right. They don't take long to cook,

Put them on a cookie sheet and season them with your favorite spices. I like salt only but you can use anything you prefer. Bake at 350 for about 15-20 mins. Should be crunchy when done. Good Luck!

Take a cake tray place foil paper on top, put cleaned seeds to the top sray with butter and sprinkle garlic salt on top, cook for 45 mins.
You can also do this with cinnamin to make sweet seeds, or brown maple sugar.
Just a few ideas.

Wash them off in a collander. Lightly grease a cookie sheet with non- animal oil. (or they have a short shelf life because they go rancid) bake 350 degrees F.Salt is optional.
Watch them so they dont burn. Altitude affects baking time so that is why I cannot nail down the exact baking time.
