In Houston there's a restraunt called "This is it soul food" they have the best ox tales and all kinda greens...this restraunt was even in a movie called Jason's lyrics...the problem is...
yea, I can go buy some ox tales and mustard/collard greens...but what do you spice them with or put in them...I don't want Rachel Ray's recipe,I want someone's mama's recipe,some true down home southern soul food recipes...I'm in Texas and I will know the difference,I just don't know how to cook it...Thanks...

oxtails just season with salt, pepper, and old bay, dredge in seasoned flour, and put in a casserole or baking dish and cover with onions and 1/4-1/2 deep water (depends on how much gravy you want) bake @ 350 for 45-60 minutes and serve over rice.

greens just clean real well and tear or cut unless you buy those packaged already clean cut ones. choose what meat to season the greens: bacon, salt pork, smoked hocks, smoked turkey wings or necks, smoked whatever you like. If you choose bacon, slice bacon into small strips and brown in pot, add your greens and enough water to make a good amount of pot liquor, bring to a boil, reduce heat and cook until desired doneness. If you choose smoked meats, put meat in pot and cover with water. Bring to a boil, reduce heat and simmer for about 15-20 minutes to flavor the water, add greens, bring to a boil again, reduce heat and cook until desired doneness. If you choose salt pork, cut off a piece about 1-2 inch square and slice into smaller pieces. Put in pot and cover with water. Bring to a boil, reduce heat and simmer for 15-20 minutes to flavor the water, add greens, bring to a boil again, reduce heat and cook until desired doneness. Don't forget the corn bread and hot sauce.

1 c flour
1 c corn meal
1 T baking powder
1 t salt
2 T sugar ( 1/4 c if you like it sweeter)
1 egg
1 c milk
1/3 c oil

Mix all dry ingredients in a bowl and make a well in the center. In separate bowl or 4-6 cup measure mix all wet ingredients. Pour wet into dry. Stir until just mixed. Pour into a buttered 8x8 baking pan or 10" cast iron skillet(I use my grandmothers). Bake @400 for 20-25 minutes or until golden brown and knife or toothpick inserted into center comes out clean. Rub stick of butter on top right out of the oven about 3 or 4 times around. Recipe can be doubled and cooked in a 9x13 dish.

Well, Crystal, no one can really tell you how to make soul food. Great soul food cooks are not made overnight, it comes with years and years of experience.

I see you know about spicing up soul food. And to let you in on a little secret. Using spices wisely is the key to producing wonderful soul food. It's how you spice up your soul food that makes all the difference.

However, I can direct you to some great soul food recipes. Many were my mama's and other family members like grandmother, sisters, aunts, and friends that just know how to cook.

I have never had ox tails.. unless they have the same name as neckbones.. but I know how to make greens . I just made some yesterday.

1 head of green gabbage
use smoked turkey leg or wing (healthier)
1 prepackaged of washed greens preferably turnips(because they are easier to cook)
Now season as you like : Here are some suggestions
salsa medium to hot
jalapeno peppers
Seasonings: salt pepper, onions, garlic
Ms. Dash... (a variety)
a pinch of sugar to neutralize the flavors

appropriate, i'm assuming you're talking approximately real soul meals and real Mexican meals, now no longer the Mexican meals you get interior the U. S., swimming in cheese and overly spiced with cumin... i might decide to %. Mexican meals because of the fact i understand how multiple it is from area to area and what variety diverse styles of spices and methods are used to make it. Soul meals seems form of blah to me, i will in uncomplicated words eat fried fowl such endless circumstances.

Ox tales...season with what you can handle...I use salt pepper and red pepper flakes...

brown with onions over a medium heat, fill pan with about two inches of water and let them simmer in this for about an hour...the water will evaporate...when it does, just keep adding more in...

serve over white rice
