Tonight I want to make a meal using Chicken. Im a newly wed, just learning to cook for two (Smile) I would love some help on a tasty recipe you have cooked or would like to share. Thank you

I would cook your hubby up some Chicken Alfredo, it's easy, quick & SOOOOO good....

1 lb of boneless, skinless chicken breast, cut into bite size pieces
1 clove of garlic (or powder if needed)
8 oz Sliced Mushrooms
Sundried tomatoes (optional)
1 jar of Alfredo sauce (I like Five Brothers or Classico brand)

Cooked Fettucine

In a large skillet, coat with oil, add minced fresh garlic & chicken pieces. Season with season salt. Cook for a few minutes & add mushrooms & tomatos. Cook for 2 or 3 minutes and add jar of alfredo sauce. You may add some milk or water if needed to get the desired consistency. Simmer on low for 10 minutes or so until chicken is done.

Serve on bed of fettucine.
Goes great with Caesar salad & french bread!

Fairly easy and it tastes better than the restaurants do!!

4 boneless chicken breasts, pounded flat
4 TBSP cream cheese with chives
8 strips bacon

Place 1 TBSP cream cheese in the middle of each flattened chicken breast. Roll up chicken using two strips of bacon to secure each. Bake at 350°F for 1 hour. Enjoy!

Try homemade chicken and sweetcorn soup., boil up your chicken (take skin off first), the longer you leave it simmering, the tastier it will be. Meanwhile, peel and chop carrots, onions, small turnip and maybe a leek. Remove chiken from stock, take off meat and put back in the pot, throw away any bones, add vegitables and a tin of sweetcorn, let it simmer for an hour or two, and hey presto, Home made chicken and sweetcorn soup. Oh I nearly forgot.....add salt to taste when you add veggies. ENJOY!!!! x and congratulations on your wedding !!!!!

I love the recipe on the back of the Corn meal canister. It's herbed oven baked chicken. Kinda tastes like fried chicken, only healthier.

Whole Chicken...

Get some fresh rosemary and a lemon. Thinly slice the lemon and place slices between the skin and the chicken, rub with rosemary all over the top of it and bake! You could quarter some new potatoes / red potatoes and place those in the same pan while roasting...

Antipasto Chicken Sandwich:

To speed preparation, purchase roasted chicken breasts and shred the meat. Prepare this sandwich the morning of your picnic, and wrap it tightly in foil.

1 (10-ounce) loaf round focaccia, cut in half horizontally
2 tablespoons olive paste
2 cups shredded roasted skinless, boneless chicken breast
1/2 cup coarsely chopped drained marinated artichoke hearts
1/2 cup chopped drained oil-packed sun-dried tomato halves
1/2 cup coarsely chopped bottled roasted red bell peppers
2 ounces thinly sliced prosciutto
1/2 cup (2 ounces) shredded fontina cheese

Spread bottom half of focaccia with olive paste. Arrange chicken on top of paste. Arrange artichokes, tomatoes, peppers, and prosciutto over chicken. Sprinkle with cheese. Top with top half of focaccia; press gently.

Heat a large nonstick skillet over medium heat. Add sandwich to pan. Place a cast-iron or heavy skillet on top of sandwich; press gently to flatten. Cook 2 minutes on each side or until bread is lightly toasted (leave cast-iron skillet on sandwich while cooking). Cut into 4 wedges.

Yield: 4 servings (serving size: 1 wedge)

Chicken and yellow rice is quick, easy and very tasty. I suggest Vigo yellow rice, skinless boneless chicken breast boiled in chicken broth. Use broth for rice too.
