i have a box of weetabix crunchy-bran flakes that i dont like as a cereal,:-( does anyone know any recipes that may be a nice way to use them up?

Delicious and Effective Crunchy Raisin-Bran Muffins


TOPPING
3/4 cup bran flakes (crush in ziplock bag)
2 tablespoons butter, melted
1/4 cup brown sugar
MUFFINS
1 egg
1 3/4 cups bran flakes
1 cup buttermilk (lowfat or other)
3 tablespoons vegetable oil (I used olive)
1 cup flour (wheat or white or combo)
1/3 cup packed brown sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 cup raisins (can use any dried fruit or fresh/frozen berries-drained)

Makes 10- 12 muffins (2 1/2-inch) or 18 mini-muffins Preheat oven to 400 degrees F Prepare muffin tins (grease or paper-line) Mix"Topping" ingredients- set aside.
In medium bowl, beat egg lightly.
Stir in cereal, buttermilk*, and oil Let rest 5 minutes- stir to break up cereal flakes In large bowl, combine flour, sugar, baking powder and cinnamon Add wet cereal mix to dry ingredients all at once Stir just to combine- batter will be thick Fold in raisins (or other fruit) Divide evenly in muffin tins (fill to brim for extra large tops) Sprinkle"topping" evenly on each muffin Bake 20-25 minutes (if using mini-muffins- cook 10-15 minutes)*1 Tablespoon lemon juice or vinegar and enough milk to equal 1 cup may be substituted- let stand 5 minutes to"curdle".

BRAN FLAKE BARS

1/2 c. butter
1 c. packed brown sugar
2 eggs
1 tsp. vanilla
1/4 tsp. salt
1 c. flour
1 1/2 c. bran flakes
Confectioners' sugar

Combine first 5 ingredients, then stir in flour and bran flakes. Spread in greased 9 x 9 inch pan and bake at 350 degrees for 25 minutes. After cool, sprinkle with confectioners' sugar. If you double recipe, use a 9 x 11 inch pan.

BRAN FLAKE COOKIE

1 c. white sugar
1 c. brown sugar
1 egg
1 c. veg. oil
1 c. shortening
3 c. flour
2 c. bran flakes
1 tsp. soda
1 tbsp. sour milk or buttermilk
1 tsp. vanilla
1/2 tsp. almond

Cream sugar and shortening. Add egg. Add soda which has been mixed in sour milk. Add vanilla and almond. Mix in flour and bran flakes. Press cookies down on ungreased cookie sheets. Bake at 325 degrees for 8 minutes.

BRAN FLAKE MUFFINS

1 1/2 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. sugar
2 1/2 c. Raisin Bran flakes
1 1/4 c. milk
1 egg
1/4 c. vegetable oil

Mix Raisin Bran flakes and milk and let set 2 minutes.
Add all ingredients and mix well by hand. Bake in muffin tin. Makes 12. I add more raisins (optional). Bake 400 degrees, 18 to 20 minutes.

If you want Raisin Bran muffins use Raisin Bran. For plain bran muffins, use Bran Flakes.

chocolate corn flake/krispie cakes.... i mix rice krispies with shredded wheat to make these for my kids as they wont normally eat the shredded wheat by itself....sneaky i know but they eat them!
