The reasons there is so much tax can be summed up easily:

Do you want all criminals in prison to be released? Taxes pay for them to stay where they are.

Do you want treatment when you are ill? Taxes pay for the NHS.

Do you want to get an education? Taxes pay for schools.

Do you want your bins collected? Do you want the roads maintained? Do you want the police? Do you want an army? Do you want SSP when you are off ill, or SMP when you are having a baby? All these things cost money, and people who DON'T pay taxes increase the overall tax burden for the rest of us.

So we don't end up in the dark ages again, taxes are essential.

It's so that the people who go out honestly and work for a living get punished and have to pay more and more to fork out to hand to people who don't want to work and are content just to sit around sponging money. We pay more to improve their quality of life, whilst their sort of people rob our houses, mug us in the street and steal our belongings. Sounds like a great scheme doesn't it.
The government also take more money off us to cover up for the mistakes they make and the incompetence they show at dealing with money, or rather wasting it. Once they've wasted one lot, they tell us something's gone wrong and that it's going to cost the taxpayer x amount of money to put it right.
It's absolute BS, no wonder this country is going to the dogs. We're full of foreign immigrants, white trash, criminals, teenage mothers, binge-drinking yobs, and corrupt and incompetent politicians.

What do you expect them to do? Think up innovative policies to make the country better? What a ridiculous idea. They're Labour.

Simply put, they do it because we allow it, and they will continue to do it as long as we allow it. So - the better question would seem to be WHY do we sit still for having our pockets picked?
