Can I make it the night before? or will this mess it up?

I want to make the dough the night before and cut them. Then the next day actually bake them.

Yep, make the dough the day before, roll it like a log, as big around as you will want your bisquits, wrap it tight in plastic wrap, and refrigerate. about an hour or so before you want to cook your bisquits, remove them from the fridge and cut them to the desired thickness and put them on a baking sheet until they reach room temp and cook!

Biscuits are always better made fresh, but----it is also nice to have the baking out of the way. When I make biscuits, you can make them taste just almost as good by doing the following:
I will size this for about 12 biscuits. Go ahead and follow the recipe and bake the biscuits. Allow them to cool completely. Then place the bisuits in a zip-lock bag (remember if they are hot when you do this, they will sweat and be soggy/nasty). Store them on the counter at room temperature (since you are using them the next day - they will actually keep for about 2 -3 days). Before you are ready to eat your meal (make this the last step), take the biscuits (12 at a time), and place them in the microwave for about 30 seconds on high. Take them out and check to see if they are hot. Microwaves vary, so you will need to experiment with the time. Too long and you have a years supply of hockey pucks. I also get biscuits from a local Chicken Express, and do them the same way when I am lazy. Enjoy.

I will say yes and here's why... When I was small my grandma used to make biscuits from scratch. On holidays she would make the dough the night before then keep them it in the fridge until the next day. She would let them come to room temperature before doing anything else. They were yummy.

The best way of knowing the answer to this question, is to make a batch, and try leaving a few in the freezer...Then take out as needed, and see how they taste...Some bakings are only good fresh, but others can be frozen and reheated...

Biscuits are always better when they are fresh made even though some people make them and freeze themI like mines hot out of the oven
