Well I used to make this delicious 'HAWAIN CHICKEN BURGER with cheese'.
Cut the pineapple in rings and grill it for very short period of time or use it fresh.
if you have chicken spice, then you can spice the chicken with that otherwise you spice it with salt and pepper and sprinkle a bit of lemon juice over it.
Heat a frying pan and cover the base with tiny bit of oil and cook the chicken. if the fillets are very thick, then you can cut it in half so that the cooking process is quiker. get hamburger buns and put some lettuce on it, then the chicken fillet followed by the pineapple ring and cheese. flavour it to your own personal taste! you can put on some mayonaise/salad cream. whatever you want!
YOu can also make a chicken stirfry. cut the fillets and spice it to your personal taste. fry it in a pan and ad the pineapple pieces to it when the chicken is almost cooked. you can ad a 'sweet&sour' sauce to the chicken and pineapple and cook a extra dish of rice or pasta!

You can grill the chicken with butter, salt, garlic powder, and black pepper(add the spices on one side while the meat is cooking then repeat the process when you flip it) and when its cooked, lay the cheese on top of them , it should melt over it.
You can fry the pineapple( assuming they are slices) with butter, water and a tbsp of sugar until the liquid turn to a syrup type sauce.
You might add some fresh salad and fresh tomatoes to give it some colours.

pineapple upside down chicken! Layer the pineapple in a baking dish. Put the SALTED chicken breasts on top, cover, and bake at 400 for 45 minutes or until done. Take it out of the oven and IMMEDIATELY put the cheese on top. It should melt on it's own, but if it doesn't put it back in the over for a couple of minutes. When the cheese is melted, serve!

Make a slit in the fillets, stuff with pieces of pineapple spiced with coriander and ground mixed peppers. Make a sauce with the pineapple juice, ground ginger, cardamon, grated ginger and garlic and add a splash of vinegar or lemon juice. Serve with rice and a herb salad Eat the cheese later with crackers.

Add some treacle to the pineapple and make a sponge type pudding. Cheese/Chicken dont really go.....so just have the chicken, cant give recipes as dont cook or eat it!

Don't know the recipe but my friend makes a lovely carribean chicken and it has pineapple and spices in it.Maybe you coudl look for that online.Happy cooking.

Dice the chicken and brown it real good in frying pan in a little butter, get a pre made pizza crust and some marinara sauce make your self a tropical pizza! or cook it the same way and add teriyaki sauce and serve over rice!

Ditch the cheese.
Marinate the chicken in teyaki and grill both the chicken and pineapple slices.
Grilled pineapple is sooooooo good!
