My friend worked in a chinese restaurant and always said that and I don't think she really knew what it meant.

'How are you' in Mandarin is 'ni hao ma' (你好吗), so you're close. Was she speaking Mandarin or Cantonese? Canto is pronounced differently, kind of like 'nay hoo ma'.
