I saw this on the tv not that long ago. When they make french fries, the excess off the potato when the fries are formed, is what they use to make tater tots. They are formed, flash frozen. The browner tater tots, like Orieda brand, are flash frozen, then fried for just a few so they will be golden in color but still hold their shape to be refrozen for packaging. Think it was on the food channel is where I saw that.

Yes. They are ground up potato flakes compressed into the shape of a "tot." When deep friend the heat and fat in the oil causes them to soften and brown, while the water released from the flakes themselves makes the internal component of the tot soft and moist.
They are good with ketchup.

Highly processed potatoes, but potatoes nonetheless. I like to think of them as hand-held hashbrowns. (I love them with malt vinegar and pepper.)
