Nobu is an obvious choice - regretably I've not been to compare it to my recommendation - which is Wakaba
http://www.london-eating.co.uk/3081.htm
I agree with the reviewers on this site - the restaurant is plain, without decor and has no backgound music, but the japenese food I had here was plentiful, varied and delicious. The service is wonderfully attentive and polite and the price around 30 pounds per head for a good filling meal + a few drinks.
It's right next to Finchley Road tube station, plus unlike the more famous japanese restuarnts in town, not as well known - so booking is rarely required. The final thing I noticed is 2 out of 3 dining parties were primarily east asian - often a good sign of a more authentic local cuisine being served.

Definitely Nobu - signature dish is Black Cod - amazing! Bloody expensive though but you did ask for the best in London!

i can highly recomend Matsuri. there is one in st james and one in holborn.
i prefer the st james one.
its pricey but worth it!
it has most if not all japanese cuisine. there is sushi but it not in your face and you dont have to eat it.
good luck!
Japanese food rocks!!
