Easy Walnut Cheese Chicken Appetizer Snack
Bite-sized chunks of tender moist chicken encased in a walnut-cheese coating, won't last long on any appetizer tray. You can make these ahead of time & freeze or bake & serve right away.
40 min 20 min prep
6 chicken breasts
1 cup cracker crumbs
1/2 cup freshly grated parmesan cheese
1/3 cup finely chopped walnuts
1 teaspoon dried thyme
1/2 teaspoon dried tarragon
1/2 teaspoon salt
1 garlic clove (minced)
1/2 cup butter, melted
DIRECTIONS
Cut chicken into 1 inches cubes; this is easier if they're partly frozen.
In a small bowl, combine rest of the ingredients except butter.
Dip cubes into melted butter, then into crumb mixture.
On foil-lined baking sheet arrange pieces 1/2 inch apart.
Cover and refrigerate (or freeze in single layer, then package in airtight containers; No need to thaw before baking).
Bake, from fresh or frozen, uncovered at 400F for 15 - 20 minute or until golden brown and cooked through.
Serve hot; if serving to guests then insert toothpicks for easy handling.

here's a really simple chicken nuggget recipe...
INGREDIENTS
* 1/2 cup seasoned bread crumbs
* 2 tablespoons grated Parmesan cheese
* 1 egg white
* 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
DIRECTIONS
1. In a large resealable plastic bag, combine the bread crumbs and Parmesan cheese. In a shallow bowl, beat the egg white. Dip chicken pieces in egg white, then place in bag and shake to coat. Place in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake, uncovered, at 400 degrees F for 12-15 minutes or until chicken is no longer pink, turning once.
This serves about 4.

CHICKEN LOLLIPOPS
INGREDIENTS
* 4 skinless, boneless chicken breast halves - cut into 1/2 inch cubes
* 1 egg
* 2 tablespoons milk
* 2 cups crushed potato chips
* lollipop sticks from a craft or party store
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
2. Crush potato chips onto a plate. In a large bowl, whisk together egg and milk. Dip the chicken cubes into the egg mixture, then coat well with potato chips. Spread the nuggets onto the baking sheet.
3. Bake for 10 minutes. Turn nuggets over, and bake for 10 minutes more, until golden brown. Remove baking sheet from oven, and insert a lollipop stick into each nugget.

The best chicken strips ever ... slice chicken cutlets into thin strips, season with salt and pepper ... dip in melted butter and roll in crushed cornflakes. Serve with ranch dressing and honey mustard.
Terriyaki wings - Mix raw chicken wings with Soy Vay Very Terriyaki sauce (or any other good quality brand) and bake fpr 35-40 minutes until done.
Chicken quesadillas - Flour tortillas, shredded cheese and grilled chicken, chopped scallions. Serve with sour cream and salsa.

Chicken Pate
2 skinless boneless breasts of chicken, browned in any kind of cooking oil, chopped up, and cooled
1 quarter onion, diced
1 garlic clove chopped
1 tablespoon pimento (optional)
1/2 a teaspoon salt
1 teaspoon ground black pepper
1 tablespoon prepared mustard
1/2 a cup of mayonaise
Blend it all up in a food processor, chill for at least a 1/2 hour, and spread over toast, crackers, or a lettuce leaf (fold the lettuce leaf and eat like a sandwich.)
BBQ Chicken in Pita Bread (or poured over toast)
4 breasts of chicken, cut-up, and browned in a skillet, with any oil
1 cup of your favorite BBQ sauce
1/2 a cup chopped onion, if desired
1 teaspoon black pepper
1 stalk of celery, chopped finely
4 slices of Pita Bread, or toast, any bread you like
Cook the chicken, and celery together, until the chicken is white, add all the other ingriedients, simmer on a low heat until the sauce is thick, stir it often.
Serve inside the pita pocket bread, or pour over toast. Yum, Yum!

it all depends on you taste preference,
for chicken nuggets =
take 4 boneless skinless chick breasts cut into cubes -
1 box shake and bake (any flavoring will do -i use the ranch one)
take the chicken - shake it in the mix - and place in oven for 10-15 min @350.
they are good to dip in bbq sauce, ranch , or toss in hot sauce for a buffalo type of treat.
or you can go the really easy route and just purchase the quick fix items thay have in the freezer sections of you local supermarket :)

Using canned chicken, you can make a quick and easy chicken salad.
Drain water or oil from chicken
put chicken in bowl.
Put in mayo. Start out with a small amount and add more if it is too dry when stirring together
Put in white grapes. If large grapes then cut in half. As many or as few as you want.
Put in some celery or celery flakes. As much or as little as you want.
Optional walnuts. If you want some extra crunch to your salad.
Stir together. If too dry add more mayo
Put on bread or crackers.
Enjoy
Easy and without adding extra calories, fat, or greasy feel of fried chicken items.

chicken quesadias
2 cups of shredded chicken, or thinly cubed
1 cup shredded cheese (your choice, I prefer provolone)
1 cup of ranch dressing
8 flour tortilla shells
combine first three ingredients in a bowl until well mixed.
place spoonful of mixture on one side of a tortilla shell. Fold.
continue with remaining 7 shells
bake at 375 until top is lightly brown or cheese is melted.
cut and serve.
