Butter, or spray with a nonstick vegetable, a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan. Preheat oven to 350 degrees F (177 degrees C). (Note: if you are using a dark colored pan reduce the oven temperature to 325 degrees F (160 degrees C).)
In a large saucepan, over medium heat, bring to a boil the sugar, water, butter, spices, raisins, cranberries, and cherries. Boil for five minutes, remove from heat, and let cool till lukewarm. Stir into this mixture the flour, baking soda, vanilla extract and candied fruit. Pour into the prepared pan and bake for 45 - 60 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and let cool on a wire rack. Cover and store, if possible, for a few days before serving.

Makes one - 9x5 inch loaf

Fruit Cake:

1 cup (210 grams) light brown sugar

1 cup (240 ml) hot water

1/4 cup (56 grams) unsalted butter

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon ground ginger

1/2 teaspoon salt

1 cup (125 grams) seedless raisins

1/2 cup (65 grams) dried cranberries

1/2 cup (75 grams) dried cherries

1 1/2 cups (210 grams) all-purpose flour

1 teaspoon baking soda

1 teaspoon pure vanilla extract

1 cup (175 grams) candied and chopped mixed peel

Rich fruit cake is not quick to make. Mixing is no problem, but baking should be slow and take up at least two hours depending on the size of the cake. Most Christmas cake recipes don't have alcohol in them and any way the alcohol content would evaporate during the cooking process. My favourite recipe involved spiking the cooked cake with a skewer and pouring a modicum of sherry over it. You don't have to do this.

Simple Apple Cake

This apple cake has a rich flavor and is incredibly easy to make.

1¼ hours 15 min prep

3 cups flour
3 teaspoons baking powder
2 cups sugar
2 teaspoons salt
1 cup oil (I prefer canola)
4 eggs
1/2 cup orange juice
2-6 medium apples (peeled & sliced)
2 tablespoons cinnamon
1 tablespoon sugar

Preheat oven to 350 degrees Fahrenheit.
Grease bundt pan (as desired).
Mix flour, baking powder, sugar & salt.
Add in oil, eggs and orange juice (the dough will be THICK).
Combine cinnamon & sugar.
Layer batter, apples and then sprinkle with cinnamon sugar mixture. Repeat as necessary until pan is full.
Cake often cooks in just a little bit over an hour.

I make a light fruit cake. 8oz self raising flour, 4oz butter, 8oz fruit (sultanas, raisins mixed fruit etc) 4oz sugar, mixed spice, 1 egg made up to 1/4 pint with milk and water.

mix the butter and the flour til its like breadcrumbs, add fruit, sugar spice, egg mixture. mix well bake for bout 1hour on gas 4

This fills a 1lb loaf tin. It's lovely with custard.

8 oz self raising flour
4 oz marg
4 oz sugar (golden granulated is nice!)
8 - 16 oz dried fruit
Pinch nutmeg & cloves
1/2 tsp cinammon
2 eggs
drop of milk

Rub the fat into the flour, sugar and spices.
Add the fruit.
Whisk the egg and fold in.
Pour into a greased, lined tins and bake at gas 3 for 2 hours.

this one is as easy as abc and a beautiful cake.12oz fruit.4oz sugar.4oz butter or marg.1/4 pint water. put in pan and simmer for 20 mins with a lid on. let cool add beaten egg and stir in 8oz self raising flour. into 7 or 8inch greased tin. cook on gas mk 2. 150C 300F. bake for 1 1/2hrs. happy baking supercook
