I have had salami the last two weekends. I rinsed off all the mold from the skin. The day after I felt really fluey, chills, shakes and itchy eyes, and stayed in for two days. Last night, I had some more salami and have felt fluey - chills and itchy eyes - for the last three hours and had tummy ache all day. I am allergic to a few drugs. Am I allergic to Salami?

While there are many possible causes of a reaction to salami, I suspect that it was the potassium nitrite that is used as a preservative. The symptoms can vary from swelling and itchy fingers, itchy skin, red blotches over the skin, and in severe intoxication, a swelling of the tongue. Now if my assumption is correct, a dose of an anti-histamine (Chlorophenramamine maleate 4 mg...trade name is Chlor-Trimeton) will begin to reduce effects...take 3 initial dose and repeat until symptoms are gone...will make you very sleepy! Benadryl is also fine. You should also avoid cauliflower (raw) at salad bars as nitrite is used to prevent yellowing of the vegetable. However, this is only a guess, based on the fact it repeated after a week.. You are not born with all of your allergies, you acquire many by being exposed to various things that bring allergens into your body....so perhaps before you could eat salami...but perhaps now you can't.
We shouldn't overlook the possibility of tainted meat or food poisoning...both would cause cramping and likely diarrhea. If you are not back to normal within a day, see your physician. Avoid contact with salami and never eat food with mold. (Cheeses are the exception)

Why would you ever eat anything that has mold on it and rinse it off.
As soon as anything becomes moldy you need to throw it away.
There are lots of germs and bacteria that can develope in your digestive tract and make you very ill....And to be honest eating anything as a meat source with mold is unhygienic.....Politly implying be more hygienic
