How do u disable use access in Windows Xp pro?

Question

I installed XP pro on a PC that I plan on using for the staff as a POS system at work. I've seen some computers that prevent users from accessing any features but for the program they want you to use, even right clicking. How can I achieve those results. Is there a program that automatically does it if you configure it?

I only want employees to use the one program on the screen.. even that needs to be limited

How do you make windows automatic updated only update at a certain time to prevent the PC from having to be restarted during operating hours??
