Unfortunately I think you just have to try and ignore it. Itching after a bath or shower is actually fairly common and is the skin's reaction to drying. It can sometimes be caused by a reaction to a product - ensure you rinse your back throughly.
You could try applying something like baby oil before stepping out of the shower (forget about towelling dry, just dance around the bathroom naked for a bit) but as the itching is mainly on your back, unless you have help or are extremely flexible you might not get the full benefit.
As a last resort - try moving to the west coast of scotland, their water is the softest I have come across in the UK and is less irritable to sensitive skin.

I had this condition a couple of years ago, I went to about 4 different doctors before I was sent to the hospital, straight away they said I had yeast mainly on my back as you said. I was told to shower from head to toe with a body shampoo the one I used was Ketoconazole 20 mg/g after 10 days the relief was fantastic, the itching comes back now and then 2 days shampoo, back to normal. I hope this helps as it can be hell.

You could have a skin condition or an allergy to the shower products you use. Ask the pharmacist at the chemist for a non-greasy skin lotion - there are many types like Glycerin Cream.

Try mineral oil. When you get out of the shower put it all over before drying off try to blend it in with the water on your skin.

sometimes colder weather makes our skin drier and itchier. and hot shower water will sometimes aggrivate itchy skin too.
it also could be the soap you are using. did you make a recent change? for instance, i was using bar soap, and switched to an "extra moisturising" body wash. it always seemed like i could never really rinse it all off. within days i was itchy on my arms and legs and back. i switched back to my normal bar soap and in about two days i was back to normal.
in the meantime, benedryl cream is good to rub into your itchy skin.

Sometimes having too hot shower water makes me itch.
Worth getting blood test at gp's to check that all your levels are ok.
In kidney patients if phosphate levels are too high I get itchy.

i would suggest Vaseline intensive care lotion for starters. and next i would check what new you've been indulging yourself with(eating or drinking?) that in turn is showing up on your skin through your perspiration.
