if you like legumes, you MUST try this:
calculate about 40 gr of small white beans per person
a few leaves of 'cavolo nero' (or if you can't find it, savoy cabbage is also good)
onion
red chilli sauce or harissa or just plain dried chilli
garlic, bay leaf, sage
Soak the beans in water overnight. The following day boil them for about half an hour (read instructions) in water seasoned with 1 clove of garlic, 1 bay leaf + a small bunch of sage - NO SALT.
When they're cooked, heat up 1 tablespoon of olive oil in a frying pan, then add the onion and when this has softened a bit, add 2-3 cabbage leaves sliced thinly. Let it go for a couple of minutes: the leaves must become crunchy. Finally add the beans and season with chilli and salt. Serve cold or even warm. You can also use chickpeas for this.

I make a Macaroni salad that goes this way.
cook according to directions 1 pkg (16 oz.) or macaroni(any shape)
While Macaroni is cooking, boil 2 eggs, til hard boiled.
While these are cooking
Cut up 2 cups cheese, mild cheddar and mozzarella, into 1 " cubes
2 stalks of celery, cut into small pieces
1/4 cup green pepper cut small
1 lb. ham slices( lunch meat type) cut into 1" pieces
1 can chopped olives
Mix these into cool, cooked macaroni add the 2 boiled eggs, chopped up. Mix well.
Mix together in a bowl, 1/4 cup miracle whip, 1 tsp. mustard and 2 tBs. sweet relish
Add to macaroni and mix well. Serve
I used to make this and when we had a party to go to people would ask me to bring this salad. I prefer DAK's Ham, but any of them work.

Take a knock at variations of caesar topped with chicken or grilled salmon.
Field greens, gorgonzola, pecans, tomatoes, onions in a raspberry vinaigrette
Wilted spinach and bacon in a tomato vinaigrette
Cobb salad.
I could go on forever, but these are all pretty good.

If you love to experiment just try out combinations of things you like and have fun with it. As long as you use things you know you like you can't come up with anything too bad.
