You can use it to cook apples or pears, adding in a pinch of cinnamon, nutmeg, ginger, or whatever mix of sweet spices you like, along with sugar to taste. The fruit will poach with a nice spiced flavor, the wine will absorb some of the fruit juices. After cooking, you can further cook down the liquid to use as a dessert sauce or set it in the freeze against future fruit poaching. The fruit is good with gingerbread, cookies, or plain pound cake. I use leftover white wine this way whenever I have it, and sweet wines work exceptionally well. The alcohol will cook off , and you won't get a strong alcohol taste, so it's kid safe as well.

Use the rest of the bottle to make mulled wine.Halloween and bonfire night are this week. If you go out in the evening and come back home chilled or frozen, there is a nice pan of mulled wine waiting for you and it will warm you in no time.
You can buy ready made sachets from the supermarket, but it is easy to make your own. Put your wine in a middle sized pan. Fill empty bottle with water to the top and pour into pan. Add sugar so that the mix has the correct amount of sweetness to your liking. Add a teaspoonful if mixed spice,a teaspoonful of each powdered ginger and cinnamon and a dash of lemon juice. Bring to the boil. Turn off heat and leave to rest whilst you go out and have fun.
Warm up again when you come home and enjoy. If it is not sweet enough you can add honey rather than sugar. I make mine with apple juice rather than water. It is also excellent for colds and improves from being left to rest overnight.

Make vinegar. Fill the bottle with apple cider vinegar and herbs of your choice, cork it and leave it at room temperature for about a month or 6 weeks, shaking every few days. It will make an herbed vinegar for salads etc.

You got some great answers about dessert dishes and the sangria idea is good too.
You also could freeze it into ice cubes and use in sweet drinks like screwdrivers or such-you won't really taste it that way and it won't make your drink watery.

You could use it to make a pitcher of White Sangria...simply add soda water, ice, and many slices of lemon and orange. Perhaps also kiwi, apple, etc. You can add a shot of Angostura Bitters or a shot of gin or vodka. I think you'll find this drink delicious, and NOT too sweet.

Make a lemon-wine sauce with it. It consists of white wine, lemon juice (not to much), salt and pepper, butter, and a little cornstarch/water mixture to thicken it up. You can use for lemon chicken or over seafood.

Use it in meats. I marinade steak in a little wine with garlic and onions and salt and pepper and cook them. I also make stir fry dishes with wine and I put a little in roasts.
Wine helps tenderize meats.
