I'm not sure where you are, so it depends. Ask your counter person which is the freshest. If you like a mild white fish, ask for that. If you want an oilier, but still tasty fish ask for that.
If you are buying a whole fish, look for pink or red gills and clear (not milky or white) eyes, and if it smells like bleach or amonia don't buy it. It should smell the way afresh breeze on the beach smells- Not like low tide. Some people say really fresh fish smells like cucumbers. I don't think so, but that's how some people describe it. IT's a clean, NOT FISHY smell.

Fresh sea bass is my favorite. But depending where you live should determine what fish is best. The fresher the better....if you live near water and can go To a fish market...they should be able to tell you whats the freshest and how to prepare it.

I love Halibut and Rainbow Trout.

I use Jiffy corn bread mix and 1 egg and dip the fish in the corn bread mix, then in the egg and back in the corn bread mix and either fry or bake it. I have gotten rave reviews from this. I made the recipe up myself. Everything is in the mix, unless you want to add garlic, but I don't.

the best fish I have had was grilled redfish w/ lemon pepper.
Also my mom baked a fish w/ a bread stuffing that was so good that I wanted to eat it ALL! I don't remember what kind of fish it was but my Mom made it taste so good!

whiting fish is very tasty if you fry it dipped in corn bread or flour even tastier first. easy to take out bones after it is cooked and has a light taste without the stinky fish odour.
