On the Big Island:
Volcanoes National Park, you can hike across a hardened lava field and see lava actively flowing.

Also on the Big Island:
The Hawaii Botanical Gardens, north of Hilo. You can hike on a wooden deck from the canopy of the rain forest see a small double water fall and then make your way to the ocean. There is also an aviary with exotic birds and being a Botanical Garden all the plants are labeled with their names.

Kauai has the most hiking trails, I like to go on Waimea Canyon trails. Kalalau trail is good, but you have to get a permit if you want to go beyond the first mile of trails.

Big Island has the Pololu trail which goes under a waterfall at the midway point of the fall. There's also the trail that takes you to the point where the lava spills out into the ocean over at Volcanoes.

Well, if your on Oahu, you have to take a stroll from the Diamond Head parking to the top. Be sure to pack lots of water and some snacks.
